just look at the chart on astro.com, it'll either have an A or an S in the appropriate box next to the orb, that will tell you.
But you look at the faster moving object relative to the slower.

So if Sun is 7.21 leo and Saturn is 7.31 leo, the conjunction would be applying as Sun is moving toward Saturn.
If Sun is 7.21 leo and Saturn is 7.11 leo, the conjunction is separating, Sun has moved past 7.11 leo and is now at 7.21.

You can do it yourself from looking at your chart:

Look at the faster moving planet (out of the two planets involved in making an aspect to each other).

If it is 'in front'of the slower planet, then your aspect is a separating one.

(if the astrological degrees are 0-360, then a planet in front will be located later in the zodiac, have a greater degree value than the slower moving planet)

If your faster moving planet is 'behind' the slower one, then it is an applying aspect, because the slower moving planet is playing 'catch up' with the slower moving one.

Generally speaking from fastest to slowest:

Moon->Mercury->Venus->Sun->Mars->Jupiter->
Saturn->Uranus->Neptune->Pluto.

The Speed is related to the distance of the planet from the sun, except we start with the moon because western astrology is geocentric.

You can also look up planetary motion speeds online.
