This is my new favorite food of ALL time.

yum.

But i'm just eating it plain or with a little vegetable stock, I have thought about a sweet version.

I was hoping some of you may know of a good recipe for it. ???

I think my husband is too polite to say anything about being handed a big bowl of quinoa goo every night. I could eat it forever though, and it's the perfect food for someone with very little time and who expends a lot of energy.

I just googled the image, mine looks way more goopy than that! maybe I should use less water.

I just love it though, but it would be nice to have as a proper meal. I was thinking of stirring sweet potato & spinach through it.

Yes it is grain-like.

I haven't tried it yet, but am wanting to. I just found out this past year that I'm gluten sensitive, so have been looking for alternatives.

I posted on this a while back

I used it for everything and anything! And especially dishes that use rice.

I made a great Chicken and Rice a while back and used quinoa instead.

I like it with a sprinkle of Parmesan cheese, steamed veggies, really anything!

Ami, depends on how you cook it. I have a rice cooker that makes it perfect!

Char, it has a taste all its own.

The texture is like a mini rice, that was a bit undercooked. People say it has a "nutty" flavor, I suppose if one had to give one flavor to quinoa...but it is light, not overwhelming, and a much lighter feel all around.

Like rice, it has a very earthy feel going into the body.

It is rich in amino acids.

The Incas called it "mother seed" as it is related to leafy greens more than rice, or any other grain. It is a seed that sprouts leafy green flora if not harvested.

To me it tastes really earthy, sort of bitter, all most like dirt but not in a yuck way, in a yummy way. I like adding veg stock powder to it. I was thinking of doing a veggie salad with it, like mixing spinach and other veggies through it. I bet it's good with maple syrup too.

SC, I picked some up just the other day & am going to make it this weekend!

Here's a recipe for Quinoa Pilaf:

QUINOA PILAF:

1/2 cup carrots, diced
1/2 cup green onion, diced
1/4 cup celery, diced
1/4 cup green pepper, diced
1/4 cup red pepper, diced
6 cups Quinoa, cooked using basic recipe
1/4 cup butter, or olive oil
2 cloves garlic, crushed
1 cup almonds, sliced
1/4 tsp oregano
Salt to taste

Saute vegetables in butter or oil until crisp; stir in oregano. Add sauteed vegetables to cooked quinoa, mix well. Salt to taste. Add almonds. Serves 6.

QUINOA STUFFED PEPPERS (4 servings)

1 cup traditional Quinoa
2 cups water
4 large or 6 medium green peppers
1 medium onion, diced
1/2 lb. fresh mushrooms, sliced
2 tbsp butter
1 28oz. can tomatoes, coarsely diced (reserve juice)
2 garlic cloves, crushed
1 12oz. jar Mexican salsa
10 oz. mozzarella cheese, shredded
2 tbsp. dry sherry

Pre-heat oven to 325 degrees.
Cook traditional quinoa following the directions on the side panel of the box. (These directions advocate cooking quinoa like rice - in a rice cooker, you add 2 parts water to one part quinoa - when the cooker shuts off, the quinoa is done).
Steam 4 large or 6 medium green peppers until soft but not limp. In a large skillet, saute the onion and mushrooms in butter. Add the dices tomatoes (reserve the juice). Add the crushed garlic and Mexican salsa. Cook over medium heat for 10 minutes. Add 2 tbsp dry sherry and simmer 10 more minutes. Fold in quinoa.
Place peppers in baking dish and fill with quinoa mixture. This will take about half the mixture. Thin remainder with reserved juice and pour around peppers.
Sprinkle shredded mozzarella over peppers and bake in 325 degree oven for 30-35 minutes.

O my goodness, I use Quinoa instead of rice to stuff my bell peppers as a rule now..

As a matter of fact, I substitute Quinoa for rice in all dishes that call for rice..unless otherwise mandated

Quinoa is easy to prepare just by itself and is good in salads or to replace rice in dishes.

Stir 1/2 cup quinoa into 1 cup boiling water, simmer on low for 20 minutes covered will make enough for one person. I like it to replace couscous for tabouli.

I think I may have a rare quinoa allergy. I ate it most days for weeks then one day I made it for lunch and my stomach turned off it! But I ate it anyway. About 2 hours later I will just say I was having a severe gastric evacuation (both ends) in a violent way, I actually originally attributed this to zinc oxide poisoning but that was only part because I handled such metal without rinsing my hands, I did doubt that really would have caused it. I couldn't think if why. I ate a tiny bit of quinoa again a week later, a mouth full because I will still having an aversion to it, that day I suffered major stomach cramping and the runs all day. Nice huh? So I still didn't think it was quinoa (I have 3 grubby kids so I thought I just had picked up something) one night I made a veg stir fry and I decided to just mix a bit of quinoa in it, I was still hating the thought of eating it but thought if I mix flavours with it then I could eat it. I only had and swallowed one mouthful and felt like I was going to puke. So I then avoided the quinoa and just picked out all the veggies and at them. I woke up at 11 that night with total indigestion, my food felt like it hadn't moved (gross feeling ) and I felt it traveling up my throat (so sick!) I ran outside and puked until my stomach was empty. Now in NEVER eating it again shame

LOVE quinoa!

I just tried something new with my quinoa the other day. Instead of using vegetable stock, I used the juice of one large cucumber. It gives it an amazing and unique flavor, a bit sweet and not at all salty like some pre-made vegi stocks can be. I also tried it with celery juice. the cucumber was better and more flavorful.

I make a few similar pilaf/ salad recipes. My favorite is a combo of slightly steamed Kale, raw fresh spinach, raw red cabbage, chopped fresh herbs (chives, dill, mint,basil) a bit of olive oil and balsamic. then diced tomatoes, sweet corn, and feta cheese (optional) mixed in with the cucumber quinoa. a few scoops of the quinoa on top of the mixed greens and a scoop of greek yogurt..yummy.

i cook it with dried mushrooms, reconstituted
i use the mushroom water, strained plus the chopped mushrooms
the spices, i vary, mostly green herbs

i suppose you could use anythin to flavor it - maybe even herbed salt (Herbmere, not sure of spelling)

You have to rinse Quinoa really well or it tastes bitter. To save time you could get triple washed Quinoa at the health food store.

I toast all my grains before I add the water, but when you wash them first you cannot toast them. I do not rinse any of the other grains besides Quinoa.

Do you remember that story about the Nuns in Japan during the war who all got sick because they washed the rice before they cooked it? Washed away all the nutrition.
