What are your must haves spices and why?

Which ones would you have a hard time cooking without?

I would like to have more but I find that if I buy too much I don't use it and end up just using the ones above a lot more.

A hard time cooking without......not really I am the improviser but the most essential are:

Garlic
Nutmeg
Cinnamon
peppercorns
Paprika

Things I prefer to keep in stock:
Pink Peppercorns
Hawaiian pink sea salt (mineral)
Saffron

SC, what dishes do best with Cardamom?

Will be back with my faves and what I have in my spice cabinet later.

For some reason, i've been craving Tabasco on everything lately.....

ugh - maybe I should take a picture of our spice cabinets in this house... we grow some of ours and jar them, and then there's so much that I use or my MiL's family has me using that I don't know the English for! haha

Plus husband works for his father - they build custom kitchens/baths --- our kitchen is one of their best projects. lol (although I hate it; it's too much space or me1) >.<
ANYWAY!!!!!!!
These are the must haves/necessities (that I can think of off the top of my mind)

S&P (kosher/sea - whole kernal/ground)
Cayenne
Chili Seasoning
Crushed Red Peppers
Paprika
Allspice
Cloves
Italian/5 Seasonings
curry pwd
Bouillon/Broth pwd
Baking Pwd - Creme de Tatre
Onion Salt
Celery Salt
Garlic Salt/Pwd
dill
Mustard/seed
tea/mint/bay leaves
the usual culprits - dry basil/oregano/parsley lol
Nutmeg
Cinnamon
Vanilla Bean/extract
Lemon extract
Cocoa Pwd

I'd say we run out of cinnamon and vanilla the most... husband likes baking... Portuguese use a whole lotta cinnamon on their desserts.
And, I use it along the walls of the house... (whah? it's enviro/child friendly ant repellent!) ^^

this is in no way complete --- we do use a lot of spices... Latin families tend to, I think... Most of mine are the spice/hot category --- hot sauces too... BBQs Marinades... but I didn't list them cause I really don't know which, if any, are actually considered normal condiment/spices for a typical spice rack/shelf... like, we even keep our corn syrup and powdered sugar there.... but it's not really a spice... XD

btw I love that growing rack idea in the photo~ <3 I wish I could get away with doing that here!!! maybe in the greenhouse though... hmmmmm *ponders*

also - I don't get to use them in my current living situation but normally I'd have star anise, saffron, and cardamom --- but yeah... that's the epicurean Taurus Moon that demands having things of this order in stock at all times.. XD

oddly too~ I keep my artificial bacon bits in there too.... (don't judge me! x_X haha)

ah I can't think of any others we go through - or that I normally do go through, at least not rapidly enough to count... ^^; granted anything can be tossed out after a few months of shelf life.... I'm terrible with collecting spices just to try them and then not use them ever again...

I want one with a little bit of everything, but they are so expensive that way!!! and would i use most of them? prolly not.

i'm enjoying reading about your faves...

I love pink peppercorns because they don't taste like regular peppercorns, they taste great on fish, and as a garish in ice cream as well.

I have all of the above mentioned sans Anise (I HATE the smell and taste of it for some reason) and pink peppercorns, which as it turns out are not a variety of pepper. http://en.wikipedia.org/wiki/Pink_peppercorn

One spice I didn't see mentioned was savory. I love the savory my mom grows. http://en.wikipedia.org/wiki/Winter_savory

Thinking of planting my own herb garden this year. Started some parsley, Greek oregano and Greek basil in pots.

ALSO, I love the taste of fresh garlic so planted some cloves of that as well.

You know what plant tastes really bad in its fresh form? Curry. Bitter and inedible. Yuck.

If I could, I would grow all the spices I use

Garlic powder
Onion dried
Rosemary
Thyme

Crushed Red Pepper
ground Bay Leaves
Cumin
Cilantro
Paprika
Lemon Pepper grinder
Cinnamon
Dill
Garlic & Parsley mix

I remember using Dill on something and was not fond of it. I also don't really like Oregano much. & not a huge fan of Cumin, but don't dislike it either, I'll use a pinch or two in Mexican dishes.

Going to add a few things to mine based on what you all have here.

The pink peppercorn berries sound interesting. On ice cream even!? Will have to try them.

Yin, yeah I'm thinking of doing that too.

I pick up bags of dried herbs from a local market. (owners have a farm, where all herbs, veggies and cheeses are made). I found some tiny clasp cylinders to store them in and keep them on a little wire step shelf on the counter next to my stove. Top used are:
Rosemary
Cilantro
Marjoram
Italian blend
Dill

I also use dried onion, garlic salt, sea salt and black peppercorns in grinders, paprika and nutmeg. I love cooking, especially veggies with evoo and spices.

I suppose u can make them. I think they are just fried garlic. I buy a container of them sometimes and mix them in my meal.

So are Pansies.
Not all the following are herbs,
but I love adding any type of seeds and nuts to food;
like sunflower, flax, poppy seed, dill, groats, mustard seed, red pepper seed, sprouted alfalfa, radish, chia and beans.
Cattail and Beechnuts and Wild Hickory nut if you can find any are also good.
Dried re-hydrated berries/fruits in coleslaw and just about anything.
Any color currents, raisins, blueberries, quince, apricot, cranberries, LOL.....
I use such as much as I use herbs and spices,
so for me they are all seasonings.
