1/3 cup olive oil
2 sweet potato cut into rounds
4 skinless chicken legs
1 cup pimento stuffed green olives
1/2 cup dry white wine
1/4 cup honey
Fresh basil leaves
6 garlic cloves crushed
1/4 cup light soy sauce
2 lemons freshly squeezed.
Finely grate lemon peel

Lightly fry sweet potato in a skillet with olive oil. Transfer to slow cooker sauté chicken in skillet. When brown transfer to slow cooker over sweet potato.

Put olives, lemon juice, wine, honey, basil, garlic, soy sauce, lemon peel in food processor and purée until smooth pour over chicken and potato in slow cooker cover and cook on high for 3-4 hours.

This came out of my slow cooker cook book and I liked it

I'd like to try this with vegetarian chicken, as I have all these ingredients already.
