Have you tried eating Tiger Nuts yet?I love them for their bit of sweetness and their chestnut-almond flavor. When you eat them raw you need to put aside a 15 minute chewing time alotment, no kidding! You can use them to replace chewing gum and really give your jaw a workout. These are tiny tubers, roots, and have many health benefits. Supposedly made up 80% of our paleo ancestors' diet. My curiosity got the best of me and I bought a bag of them at the health food store, packaged by Organic Gemini company. The salesperson said they grind them and use them in baking. I like chewing them raw and after a while it seems like you are chewing on twigs but I don't mind it. They are high in potassium and iron and contain no sodium. I've been looking up info on tiger nuts and suppliers. Wall Mart is listed as a retailer of Tiger nuts packages - but I don't know if they are raw or peeled. If you want the fiber the raw is what you want. Also, here is a site that describes tiger nuts and its nutritional benefits. Very high in Vitamin C4.
