I picked up a Bohemian-American cookbook from 1949 Nebraska. There was a recipe for Fried Udder.

Boil the udder in salted water until it is tender, which will take about four hours.

When it is done, take it out and slice thin.

Beat two eggs, adding salt and pepper.

Dip the sliced udder in flour, then in the eggs, then in grated bread crumbs and fry to a golden brown in rendered butter.

You can prepare tripe or tongue in the same way.

My mother used to make tongue. I remember I used to see it in the kitchen and think it was so udderly weird.

Yeah, my grandmother made this awful sour smelling soup with a huge cow tongue, red beets, called borscht
