- Zest your fruit with the fine side of a cheese grater - all zest, no pith
- Fill a jar with the fruit zest
- Add vodka (or grain alcohol) and fill to the top making sure the fruit is completely submerged in alcohol to prevent it from rotting
- Cap the jar and set aside to steep for 10 days
- Strain the zest by transferring the liquid to a clean decorative bottle - use a funnel and cheesecloth and squeeze it well after straining to remove all the liquid from the zest
- Add simple syrup (equal parts sugar and warer) to taste - you can start with 1 part syrup to 3 parts alcohol
- Serve in chilled glasses after dinner (you can store it in your freezer) or serve over ice cream
