wow, these are interesting points, but it's basically kind of hard to understand the significance of the myths in terms of modern astrology. Uranus is the word for "sky", which describes him well to me - vast expansive, ruling air, made of many gagillions of small air particles in a constant dance, bumping against each other, fickle, schizoid.
as the myth goes Uranus hated his children and so Gaia asked them to castrate Uranus.. and only Saturn was willing. it may say something about Saturn's attitude - perhaps subservience and more revere for the Mother (after all, it is a feminine sign) and ultimate willingness to stand against the father. Come to think of it, I know quite a few Caps who have a strong relationship to their mother. Their discipline, strong sense of responsibility, etc, doesn't necessarily have to have anything to do with a father figure, but rather perhaps my stem from their love of the mother - adding a new layer to Cap's relationship with Cancer.
Interestingly, the castration of Uranus by Saturn creates Venus, the planet of Love. by the way, Chronos also gave birth to Chiron.
perhaps the fact that Saturn(Chronos) was unable to eat Jupiter puts him as a somewhat weaker position to it. not really sure.
as for Hades, I think the story with Peresphone is a pretty potent one and can be used as a good metaphor for venus, or Hades' general approach to love.
I have my Pluto conjunct Venus anyway...
