Interesting Point...
I just spent a few hours thinking back and i think you're onto something. I mean generally, I don't notice anything flat out, I get an array of "ideas" but Mercury really does color a person's expression in interesting ways.
For example:
My sister is a Double Gemini. Most people would probably guess because of how she looks anyway, pretty tall, lanky, interesting mouth, she looks kind of like Hermes himself . There's not one thing that's Taurean about her from first glance, except her appetite. However, the moment she opens her mouth it's not the quirky, chatty, Gemini that comes out but it's the slow, deliberate, Taurean Mercury that expresses itself. She hardly says anything unless it needs to be said, and when it's said it's cutting and straight to the point(Cutting because her Mercury is opposite Pluto and square Saturn). She doesn't appear inquisitive and lively as many Geminis do, but she seems serious, a bit of a loner, reserved, practical, and extremely realistic, to the extent where some think she's negative and a bit caustic.
I've noticed that those with Mercury in the same sign as their Sun seem to have expression or communication that "fits". You know how if you meet someone for the first time, and they communicate with you in a way you didn't expect. You didn't expect them to talk a certain way, or sound a certain way based off first impressions.
Another example:
I've got an Aries friend with a very fiery chart, and a Mars/Uranus conjunction opposing his Ascendant. I think he's a firecracker of a person, who lives to take risks, isn't afraid to go after what he wants, and can be quite bossy at times.
However, most people think he's a sensitive, shy, demure, and sweet soul who couldn't hurt a fly and needs protecting at all times because he can't defend himself. He's got Mercury in Pisces.
In defense of Pisceans, he's not weak at all. But I'll admit, he is extremely scattered. I still see the Aries determination and will yet, it doesn't seem very focused. And he tends to charge into wherever his head lands rather than a specific direction (like what he wants to achieve). He is a lot less self-serving than the Aries stereotype. It's there, but it's overshadowed by his overwhelming concern for others and by his determination to always be the "Nice guy". Even if he does finish last, often. (Which Arians hate, of course )
