I have a progressed moon in Scorpio, but my natal moon is in Capricorn. I thought that progressed planets were supposed to move to the sign following the natal planet's sign (i.e. my progressed moon should be Aquarius). My other planets have moved onto to the next sign (i.e. my Gemini Sun progressed into Cancer).

What's going on? Also, Does a progressed moon in Scorpio mean that I'm supposed to react to my surroundings in a more Scorpionic way?

The Progressed Moon moves quickly, in terms of progressions anyway. Just as the transiting moon moves quickest of all the planets, so does the progressing moon.

I believe the P. Moon moves a degree every two and a half months. That is just what I remember reading about it. YOu might want to check.

The Sun would move one degree per year.
