I find some of the descriptions that I read for signs frustratingly confusing - especially when it comes to adjacent signs i find a lot of similarities. How were the descriptions decided in the first place? was it done by observing ppl's behaviour under the influence of a particular sign's ruler?? Sorry if this question is very basic and stupid.

For eg, both virgo and leos are supposed to be humble, both cappy and aquas are supposed to be bitingly sarcastic, cancers and geminis are supposed to be moody and so on.

Of course, one could explain that it's because of the other placements,aspects or ascendant. But, don't you guys think this makes astrology too generalized and unconvincing for skeptics.

Maybe you need better descriptions. People across the signs are moody and bitingly sarcastic. Not sure about humble Leos though, they might appear to be, but just try disagreeing with one.

What about:

Aries ASSERTIVE, BOLD, ENERGETIC

Taurus DETERMINED, FEELING, PRACTICAL

Gemini ENQUIRING REASONABLE, VERSATILE

Cancer CARING, EMOTIONAL, SENSITIVE

Leo WHOLEHEARTED, POWERFUL, STEADFAST

Virgo PRECISE, DESCRIMINATING, CRITICAL

Libra CONCILIATORY, JUDICIOUS, REFINED

Scorpio DEEP, INTENSE, PURPOSEFUL

Sagittarius CONFIDENT, EXPANSIVE, PHILOSOPHICAL

Capricorn CAUTIOUS, CONSTRUCTIVE, DISCIPLINED

Aquarius INDEPENDENT, OBJECTIVE, INTELLECTUAL

Pisces CHANGEABLE, IMPRESSIONABLE, IMAGINATIVE

The thing I had in mind was the progressions.
There are certain things which became clear to me after reading my progressed chart. (I wonder if it's just a layer over your natal chart??!!) I have been called a bull many times - guess what I am a progressed taurus rising, been so for years.
Have been called a rebel - progressed aqua MC!

My question was a person with a leo natal sun would be a progressed virgo sun for a good part of his life - same with other signs.(isn't it?) So, I was wondering if that 'humble' tag is a mistake by observing a progressed virgo sun.
I have come across atleast a few falmboyant cancers, short tempered pisces' and very patient aries and so on.

A Sun Leo won't become Sun Virgo.

She goes through each planet and sign and offers up an interpretation.

As example, on my chart, the Sun has progressed from Gemini to Cancer. She suggest this adds sensitivity, emotion and the ability to listen to the essential nature. Maybe she just doesn't know me well.

For Leo progressed to Virgo, she suggests this will not be very noticeable unless Mercury has also progressed to Virgo. Her reasoning is that Leo is ruled by the Sun, and is powerful in this sign. Interestingly, she also says this:
