Please share your favorite holiday recipes. I am vegetarian so I will enjoy to hear those. Here's One I shall share; Maple-Glazed Yams with Orange and Cranberries
- 4 3/4 lbs. yams peeled, cut into 1 inch pieces (fresh, not canned)
- 3/4 cup pure maple syrup
- 6 T. butter or margerine, melted
- 1 1/2 t. grated orange peel
- 6 T. dried cranberries
- chopped fresh parsely
Preheat oven to 350 degrees. Cook yams in large pot of boiling salted water 3 minutes. Drain; transfer to 13 x 9 x 2 inch glass baking dish. Blend syrup, butter or marg. and peel in small bowl; pour over yams. Sprinkel with salt and pepper, toss to coat. (can be made 1 day ahead, if so cover and refrigerate). Bake yams uncovered until just tender, stirring and basting occasionally, about 30 minutes. Mix in cranberries. Continue baking until yams are very tender and juices form thick glaze, about 15 minutes longer. Garnish with chopped fresh parsely and serve. Serves 8 to 10. (I use a bit less maple syrup and I add about 1 - 2 T. of orange juice. I also don't use the butter or margerine but you can use it or not to your preference if you mind the fat or not) Enjoy
