We just had veggie tostadas 2 nights in a row and they were SO YUMMY! Vegetarian Tostadas Freshly made corn tortillas Vegetarian refried beans Zuchini (chopped very small) Organic sour cream (or non-dairy sour cream) Shredded Lettuce (I used red) Tomatoes (chopped) Cilantro (finely chopped) Saute the zuchini in olive oil. Warm up the refried beans in a saucepan. Generously layer your corn tortilla with the ingredients, in order as listed above. Use only a small amount of cilantro, as it is a strong, spicey herb. Try to use organic ingredients, if possible! Enjoy and come back for more! IP: Logged |
