Here's a few recipes I posted a while back on another board...it never occured to me to post them here, so I decided to this morning. These snacks I made are mostly raw vegan...I hope they give you all some ideas!!!

Sweet Potato Salad

(The only cooked ingredient is sweet potato.)

You need raw spinach, tomato, sprouts and other salad ingredients. Steam the sweet potato with ginger and lemon peices. Once cooked remove lemon & ginger, and toss sweet potato in salad!

Add lemon and olive to taste.

Sprouts on Rye

I make this all the time. I prefer Raw rye bread...so all of it is raw. (you need to use a fork and knife)
All you need is rye bread, avocado, hummus, and a ton of mixed sprouts

Spread avocado on bread, add sprouts and dollop on hummus.
For extra taste pre spread with horseraddish, add a sprinkle of lime juice, pepper and salt.

This is one of my favourites!!

Mango Rice Cakes

All you need is thin puffed rice cakes.
Spread with a little mustard.
Add a few slices of avocado.
Add some diced ripe mango.
Add some alfalfa sprouts.
And top with chilli, parsely and pepper.

I ate 6 of them!!!

Here's my personal spiced rice dish inspired by a middle eastern cook book.

Spiced Rice

This is a great breakfast, or nice as a side salad.

*Ingredients:*
Brown Rice
Pine nuts
Currents
All spice/mixed spice
1 small diced chilli

*Method:*
Boil Brown Rice for 30 minutes
Let cool and mix with pinenuts and currents.
Add 1-2 teaspoons of all spice/mixed spice and mix through.
Add chillli to taste.[/font]

Wild Rice salad

This is easy, and tasty.

Cook 1 cup of wild rice for 45mins.
Once cooled, mixe through sesame oil, diced ginger, lemon juice, chilli and top with snow pea sprouts.

Raw Sandwich

This is with a raw bread I got from the health food store...it's whole rye.

You can practically put anything in it, today I had avocado, chilli, tomato, cuecumber, lettuce & carrot!

This isn't my recipe...it's someone elses, but isn't it fantastic?

Icecream Sandwiches
Ice Cream Sandwiches by Alex Malinsky

(Recipe from the raw guru newletter)

Ice Cream

1 cup coconut water
1 ½ cups almond or cashew milk
1 cup chopped young coconut meat
2 tbs. coconut oil
3/4 cup chopped soaked dates
Seeds from ¼ sun dried vanilla bean
2 pinches of salt

How to: Blend everything till smooth. Get half the batter and stir in 2-3 tbs. of cacao powder into it. Pour batter in ice cube trays and freeze until frozen. Using a Champion juicer with the blank attachment, feed the juicer the frozen ice cream cubes. Watch how it transforms into soft serve ice cream! Transfer the ice cream into a plastic container and store in the freezer until ready to make ice cream sandwiches.

Cacao Flat Cookies

1 cup soaked sunflower seeds (ground fine)
1/2 cup golden flax seeds (ground fine)
1 apple (chopped)
2 tbs. raw cacao powder or mesquite pod meal
10 or more soaked dates
1 pinch sea salt
Water

How to: Process everything in a food processor till fine. Add water if needed. Transfer the batter onto teflex sheets. Spread a 1/4 inch layer of the mixture on each sheet and dehydrate for 6 hrs. at 115 degrees F. Use a round cookie cutter to make the cookies. Place the cookies on the mesh sheets and dehydrate till crisp.

Assembly: Using a spatula put a scoop of ice cream on each cookie and cover with the second cookie. Put in the freezer to harden up before serving. Enjoy!

Spanish Rice

This recipe is not mine either..but I love it.

This recipe is from the un-cook book called "How We All Went Raw" by The Top Raw Men Spanish rice pg 43

In a salad bowl, combine:

1 head of cauliflower, grated in a food processor
4 green onions, diced
2 tomatoes, diced
1 orange bell peper, diced
1 jalepeno pepper, diced (optional)
2 tablespoons fresh lemon juice
1 avocado (mashed in)
1 teaspoon chili powder
1 tablespoon paprika
1/2 tablespoon sea salt
1/4 cup cold pressed extra virgin olive oil

Mix well together and serve. As a side dish, serves four.

*leftovers are HEAVENLY today! The flavors have marinated together and it is soooooooo good! I'm having it with avocado on a bed of lettuce-carrot-cabbage:

Hello Yin & Pixi...want some angel hair marinara?

This is a cute recipe!

Angel Hair pasta with Marinara

Use the spiral slicer on the zuchinis (you can peel them if you like)

blend in food processor:

tomatoes
sundried tomatoes that have been soaked to rehydrate
fresh dates
you can also add garlic, basil, etc

It is waaaaay better chunky style! Just mix together with peppers, onions, mushrooms & olives etc!

This next recipe is a good example how Raw Vegans don't miss out.

Strawberry cheesecake

Crust
1 cup brazil nuts (or almonds)
1 cup walnuts
1/2 cup dried figs (or dates)
1/4 cup raisons
2 tbs. of orange juice
pinch of salt

Filling
2 cups raw cashews (soaked for 10 hours)
1 cup almonds or mac nuts (soaked for 2 hrs)
3 tbs. pine nuts
2 tbs. rejuvelac or lemon juice
pinch of salt
1/3 cup coconut water and 3 tbs. chopped meat
1 sun dried vanilla bean or 1 ts. vanilla extract
4 tbs. agave nectar or honey or 7-12 soaked dates

Whipped Cream
1 cup young coconut meat (chopped up)
3 tbs. raw cashews or mac nuts (soaked for 8-10 hrs)
8 soaked dates or 2 tbs. honey (or more if you like it sweeter)
3 tbs. coconut water or almond milk
1/2 tsp. lemon zest
drop of vanilla extract

Topping
1 pint really ripe red strawberries (sliced fine and put into a bowl)
3 tbs lemon juice
1/2 tbs agave nectar or honey
pure water (not tap)

How to: Ok, begin with a round cheezcake pan (spring form pan). Process all the ingredients for the crust. Press the mixture into the pan and set aside (chill in the fridge).
Now the filling. In the vitamix or champion juicer blend/process the cashews and almonds or macnuts untill they are creamy. Put this in a bowl and add the rejuvelac and salt. Mix really well. Put in a nut milk bag or cheese cloth or bowl covered with a towel and leave it out in a warm place (room temp) for 10-12 hrs. Combine this "cream cheez" mixture and blend it with the 1/3 cup coconut water and coconut meat, vanilla bean or extract, agave nectar or honey. Put in the freezer untill ready to use.
Blend all the ingredients for the whipped cream and chill in the freezer
Now for the topping. Take the strawberries and strain them, to get the strawberry liquid from the bowl, mix that with the lemon juice and a little agave nectar or honey. Set aside untill ready to use.

Assembly:
Yay, we're almost done. Ok. Take the spring form pan, pour the filling in and tap the pan down to get all the air bubbles. Layer the slices of strawberries on top and pour the lemon mixture over it. Put the whipped cream in a star tipped pipeing bag and pipe it all along the sides of the cake, or all over. Garnish with extra lemon zest, and put in the freezer for 8 hrs.

Make a strawbery sauce to go with the cake.
1 cup frozen strawberries
1 tbs. lemon juice
1/2 cup water or orange juice

Blend in a high speed blender, and strain out the seeds. Serve along side the cake.This cake is soo good, it's better to make two. It's a little time consuming but well worth it. Trust me.

Blueberry ice cream

The recipe is super simple! Takes about a minute to make & you can use any combination of fruits!

1 cup frozen blueberries
1 banana

Blend in food processor and scoop into a bowl. Add a 1/2 cup of blueberries & stir. You can also blend it up with some agave syrup to make it sweeter! (this is not my photo)

This one is called Funky Lettuce

I have tried it with similar ingredients, but this is not my recipe.

I take a few leaves of iceberg lettuce and spread cashew butter on 1/2.

I cover the cashew butter in salt free veggie delight ( www.rejuvenative.com/catalog_vd.htm )

I add sliced avocado and sometimes add salt free kim chi ( www.rejuvenative.com/catalog_sfgkc.htm )

Fold in 1/2 & eat. It's crunchy & a little messy but the taste is divine!

Here it is, I did it open face instead of as a wrap:

SunChild I am VERY impressed, truly a fine expression of 5th house energy. My mom is a leo and she makes masterpieces, but NOT like these, your eye for color is excellent. I am quite quite impressed!!

Thanks all! I truly love it!

I'm really into combining fruits with main meals...I'm into mango and black pepper at the moment, it really goes well together. I don't think we use fruit enough...!

I watch heaps of cooking shows, like Huey, Jamie Oliver, the iron chef..ect...but most of the time I come up with ideas myself!

This is what I made yesterday!

The secret is in the spread..the flavor is a knock out...

The base is rye...the spread is:
1/2 avocado
1 teaspoon of hot chilli paste
1 teaspoon of white wine, garlic & pepper mustard
2 teaspoons of mango chutney
1 tablespoon of lemon juice, pinch of seasalt
cracked pepper
1/4 diced pickled capsicum
and plenty of chopped spring onion!

Layer on tomato, cuecumber and other ingredients...it's friggn' awesome!
