Topic: Any daily vegetarian recipes I could try out?

Hi guys I am thinking of going vegetarian and I don't know exactly where to start. I have been eating carrots and cabbges (even made my own soup recipe), but I think that if I were to completely ditch meat, I would need a couple vegetarian recipes that are affordable and easy to make for everyday eating. I am the kind of person who can't eat the same thing everyday, so I would definitely need a variety of recipes. I don't want to rely on google for this, so I'd like some good suggestions. I love taking a huge portobello mushroom (pick one with small stem), clean it and chop the stem into bitsNext place it gill side up on a toaster oven tray (add the stem bits off to the side Drizzle with olive oil, fresh lemon juice, salt, pepper Broil until it gets a little crispy Place on a bun or eat it plain You can eat the bits, too, or save them for rice or pasta

Another favorite:Wash and peel off the outer layer of Swiss Chard - starting with the stems you just peel off a layer thin like the thickness of onion skin. You can split the stems also so they cook faster Chop into chunks big enough that you would want to put on a fork, 2-3 inches. Place into a pot with boiling water and cook just until the thickest stems are tender. Drain and reserve a tiny bit of water. In the same pot heat some olive oil and then put in a garlic clove poked with your knife on low heat to flavor the oil. If you like eating garlic you can sliver it and keep it in. Add a chopped plum tomato and cook until it heats up and softens a bit. Then place the greens back in and stir around to reheat and soak up the flavor. So juicy. You can eat it on a hard italian roll as a meal, or make a platter with rice and maybe add some white beans. IP: Logged |
