Baby Food For Grownups

The Everything Organic Baby Meals Cookbook, another new release cookbook from the library that I'm reading (for fun) has baby food recipes great for grown ups, too. Sometimes I juice my vegetables, and add the juice to puréed vegetables to create a great soup, but I don't think the following recipe would work out that way.

Here's one that sounds interesting (or quirky if you like that description) that I have not tried (just to warn you) called Chicken, Banana, and Coconut Purée. Sorry no metric measurements.

6 cups water
1 small boneless chicken breast (4 oz.)
1 small (or 1/2 large) banana
1 teaspoon light coconut milk
Spices for the adult meal: red chili paste, diced onions, coconut milk, curry powder, fresh cilantro
Arborio brown rice

- Boil chicken breast in small pot until done, approximately 10 minutes
- remove chicken from water, chop into small pieces
- purée with banana and add coconut milk until it reaches proper consistency
- mix in add spices
- Serve over Arborio rice

In the 9-12 month old section there are some simple healthy soup recipes that sound good, even one for the crockpot with Indian inspired spices:

Spilt Pea Curry

1 cup dried green split peas
1 cup cauliflower florets
2 small baking potatoes
1/2 cup peeled and diced carrots
1 clove garlic, minced
2 cups water or vegetable broth
1/2 cup tomato sauce
1-1/2 teaspoons curry powder

- pick over peas, remove debris, rinse, drain, set aside
- dice cauliflower and potatoes
- combine everything in a large sauté pan or stockpot
- simmer on stovetop 45-69 minutes or until tender, OR cook unattended in slow cooker for 6-8 hours
