What lovely connections! So many good things... along with what you already listed, I love your trined fire Venuses and his Mercury/Mars completing a grand trine with your sun and Jupiter. Not only is communication easy (moon-Mercury and sun-Mercury), it's truly enjoyable (Jupiter-Mercury, his Jupiter in your third house, and your Venus probably in his 3rd house). Even though your Mercuries are square, there is some similarity in style due to yours being in Aries in the house ruled by Capricorn, and his being in Capricorn conjunct the planet ruled by Aries. And if his birth time is indeed in the ballpark of 7 AM, the ascendant-descendant reversal you have is another indicator of attraction. And your moon being in the same sign, if not conjunct, to his sun/ASC. So much natural affinity there, and mirroring... I can see why you hit it off! The north node conjunctions are exciting -- a feeling of this happening for a reason and having something important to learn from each other. With your bolder, 'public' Mercury in Aries in the 10th house, it may be on you to open up discussions when there are disagreements that he isn't forthcoming about. There are so many good communication features here, as long as you don't take arguments personally (which it seems like neither of you would be inclined to do) then those can add some zest rather than being any sort of deal breaker. But yeah, I see you maybe needing to take the lead with topics of emotional significance that he isn't naturally wired to bring up.

His sun in your 7th is classic for attraction, but his Venus/Mars/Mercury in your 6th makes me wonder if your connection with him involves some sort of 6th house matter like work, health/fitness, pets... or a 'service' dynamic of some sort where one of you naturally feels more like the giver and the other, more like the taker, or one person making more sacrifices for the other. I would guess you being the giver/sacrificer due to your water placements. It looks like you had your first date right as transiting sun was approaching your composite Jupiter, and transiting north node exactly conjunct the composite Chiron. Those are both pretty significant, and the node/Chiron transit mirrors the idea that the this union has some life-lesson significance and maybe also a healing element -- though that may come in the form of re-activating old wounds, especially if some of your experience with Cappy men in the past was unfavorable.
You're both undergoing some interesting transits right now to your nasals too. Transiting Uranus is conjunct your sun almost exactly, and promises to bring exciting, unexpected, out-of-left-field experiences that shake up your sense of identity and expand your hunger for freedom. This guy totally fits the signature for that with his sun and maybe ASC landing on your own 7th house Uranus, his Uranus conjunct your descendant (and your Uranus maybe conjunct his ascendant), AND him creating a composite with you that has five (!!!) planets in Aquarius, along with sun and moon both in the 11th house. That's a ton of Uranian energy! There isn't a whole lot of Saturn in the synastry to balance that out, but for sure having Saturn sandwiched in the composite stellium (especially conjunct Mars -- "cosmic glue") would help ground some of that energy. But be aware this relationship could have some surprises and needs a lot of room to breathe and grow.
All that being said, as a fellow Taurus with Venus in Aries square Neptune, let me add the disclaimer to not jump in toooo quickly, or gloss over things you might not actually be okay with (like his lack of romanticism -- I see that Cancer rising and Pisces Mars of yours; I think you'd enjoy a little serenading ).
