PlutoSurvivor | Do you know the correct pronounciation of Quinoa? It comes from the ancient Peruvian language that translates "He Knows". Here, in the US, we pronounce it with two syllables accented on the first, but is reall to be pronounced like "key-know-ahh" accented on the second syllable. At the root of the word comes the word for "knowledge". It was given to the people of Peru, who have their ancient origins from Egypt and Mongolia, by the Gods, and is said to have all the substance of all the foods. Only the Gods were allowed to eat it. It only grows at high altitudes so that makes sense. It was grown and eaten in secret after the Spaniards invaded and destroyed almost all the crop along with the sacred leaders. Today I cooked my red quinoa with amaranth and millet. I love mixing grains. This was a good combination, too. I don't think it has been GM or used in hybridization yet. In nature there are many species, different colors, sizes. Quinoa is even Kosher for Passover now, I think?

It's 2 to 1 proportion, and cook about 15 min. 2 water - 1 quinoa Toast the grains first if you are using triple washed quinoa. |

PlutoSurvivor | I toast the grains, then add the water and it comes to a boil quickly. You can heat the water in a tea kettle first if you want. As soon as it is boiling I put it down to a simmer and cover it. You may have to cook it 20 minutes if it is the larger grains. You can let it sit like rice before serving. You can't reall screw up Quinoa. |
PlutoSurvivor | This week I cooked rice and quinoa together, seasoned with a bit of salt, chili powder and Dutch process cocoa. Surprised myself. I don't know what possessed me to try those flavors together with the quinoa, but it worked. |
PlutoSurvivor | Made quinoa again with chilli seasoning plus raw cacao powder instead of Dutch process and it tasted better. |

I guess either way works. That goes to show you shouldn't listen to how other people tell what to do [side-note: I found that Aries and Virgo correct grammar and pronunciation the most (at least with me, they do)] |
