If she is a Cancer (And this is without looking at her other aspects which could be tremendously important), she probably thinks along the same wavelength as you. What are some ways you were thinking of telling? Go with your gut feeling...coz she prolly will totally understand and get it as well...and Im guessing you two don't have to work too hard at communication that's probably one of the best parts of the relationship. So the point is, don't fret about the way..but let her know indeed as she will probably understand. Cancers tend to like emotional, deep things..so make sure when you tell her you're in some personal place thats just right for the occasion.
