It would be difficult to pick a favorite The golden thread that runs through the Theologian Works have the same Intention, quest and favored end result.

So as a favorite, it would depend on my quest at that moment.

Today it would be Ibn Arabi .

Offhand I'd say Starhawk as I found her quite refreshing from other theologians. But it's been so many years since I've read anything by her or heard her speak (not counting an occasional report on her) that I can't really explain what I found so refreshing, though I can say she saw humanity as not above nor below Nature, but part of it, and created a balance between male & female aspects of divinity that most other theologians lack.

I enjoy Anglican Theologian Robin Griffith-Jones.

However I must say there is no single Theologian whom I fully agree with, as even literal interpretations do not actually breathe life into Christ's era.

what is Griffith Jones' angle/position? (i.e., liberal, conservative, out-there, conventional, etc.)?

I've read some of the Presiding Bishop's books and sermons and like her so far.

Comes off more as a neutral professor who specializes in apologetics and gives context to the time of Christ.

For example, during the Roman era the region was a breadbasket, a part of the Roman fears of an insurrection was the rebels burning the fields right before harvest depriving the Romans of revenues and food.

Ralph Waldo Emerson.

Not exactly a theologian, but he was a Unitarian minister if that counts.

Randall: Emerson was more of an essayist. His essay Nature was referred to as "The Transcendentalists' Bible" back in the day. It isn't just a manifesto for nature lovers but a rather mysterious, mystical work that helps you see the interconnectedness of all things, if you pay close enough attention.

Ah, I see. I know him from quotes I've seen that seem poetic.
