The second person has a predominance in social signs, whereas the first person has a predominance in personal signs. This would be an area of difference between them. It's possible that the second person would seem more mature, but it depends on how you assess maturity.
Generally social signs are focused on people other than themselves --- like their group and social environment. They are very socially conscious and savvy.
Personal sign people are focused on themselves, their own lives and when it comes to Cancer - their immediate family. The rest of the world is not all that important to them (it comes second).

When it comes to being grounded.. I'm taking this to mean realistic or down to earth. I would say the first person is more grounded because they have Jupiter in Taurus (in the 2nd house).. and that's slightly more earth than the second person.

The planets - Person 2 - has in earth are transpersonal - Neptune conjunct Uranus.. These are both rebellious planets. Neither like tradition... so the fact that they are in a traditional earth sign like Capricorn - would mean this generation likes to overthrow tradition and they find new ways of doing the same old thing.
But it can also mean they are not particularly realistic.. and perhaps want to escape (Neptune) cold hard reality (Capricorn).

Also - in total, Person 1 has three planets in earth houses, whereas Person 2 has only one.

Basically I think there are facts of life, realities of life, things that may be unpleasant to hear.. which Person 1 can deal with, while Person 2 cannot.

When it comes to being reasonable... I'm taking this to mean - reasonable in an argument.. or being able to see other points of view. Person 2 would be better at this -- because of the predominance in social signs + the dignified Venus in Libra which is trine Saturn in Aquarius.
