Okay, so I'm curious what an un-aspected sun would mean in a natal chart.

Also, I saw the chart of someone I know and their sun only has a trine to their NN in Aquarius and a 2* quincunx to Uranus. Are those aspects strong enough to divert the energy of the Sun?

Yes, still unaspected and considered peregrine.
I have an unaspected sun also. Look at the house it functions out of . It becomes even more important.
