I could never find a way to subscribe to get an email notification to a topic that was not started by me, is there any way to do this? Makes it hard to find all the ones I had my eye on or replied to :\ Especially if I'm gone for a bit.

I don't believe so. What people usually do is just bookmark the threads that interest them the most.
