Main differences between the two:
Pisces Ascendant - mutable water sign ruled by Jupiter traditionally/Neptune modernly where Venus is exalted. Feminine and nocturnal.
Changeable, adaptable, emotional, unrealistic, loving, artistic, instinctual, sensitive, dual, mute. Can be very loving and romantic due to Venus' exaltation.
Cancer Ascendant - Cardinal water sign ruled by the Moon where Jupiter is exalted. Feminine and Nocturnal.

Not a lot of difference. The main way you can tell is looking at the height, Cardinal signs are taller and have prominent bone structure. Mutable signs slimmer, smaller framed, shorter on average. Is she really tall and large boned (Cardinal) or is she shorter and lanky (Mutable.) ? Petite would lean toward Pisces ascendant. Taller with more angular features and bone structure indicates a Cardinal sign ascending at least that's general unless there are planets on the ascending degree or in the first house. My sun sign ruler, Mercury, is ascending in my chart which explains, maybe, why I am a few inches shorter and smaller boned than the rest of my family even though I have a Cardinal sign ascending. If there is a planet in either sign close to the ascendant or in house one, you have to think in terms of it and if there is more than one, in terms of them.
Cardinal signs tend to be more authoritarian looking and action demanding. They take charge more readily.
Mutable signs are more scattered, not as organized, flightier, and tend to let others tell them what to do in a more graceful way than Cardinal. Capricorn is a Cardinal sign and it likes to be in charge, so does Aries, another Cardinal sign. Can you picture an Aries bossing around a Sagittarius or a Capricorn a Virgo? I can because I have Capricorn relatives who have tried but this Virgo has a secret weapon - lots of Libra.
Can you picture your friend as a Cancer dominating a Pisces or a Pisces adapting to the needs of a Cancer?
When you first met her, did she come across as an in charge type or more wishy-washy, go-with-the-flow?
This is how you can tell the ascendant, by thinking of your first impression and how she seemed but it will be tough because she is a Cancer sun. If she is a double Cancer, should be pretty easy to tell because the Cancer characteristics will be doubled and more emphasized.
