Has gained a lot of ground in the past six or seven years. I have books out of the library now, and remember reading about the people who were challenging themselves to eat foods that were only grown within a certain radius of their home.

What do you think triggered that astrologically? Saturn in Virgo? Or Saturn in Leo? Anything else?

That sounds like Saturn in Virgo followed by Pluto in Capricorn picking up from there as it gained momentum (kind of a "status" thing). And I agree that Ceres is also likely to be involved though I don't know her positioning during this. If she's in an earth sign, then definitely.
