My first question... this girl has houses 2 through 8 packed. So all her planets are on one side of the chart, if it's 2 through 8 is that...a night time chart? If so, what's a night time chart mean for the individual?

If so, then she definitely has that. Libra ASC, Sun in the 4th house.

And what does it mean if Jupiter is square it's own sign (Sag)? This girl has Jupiter in Pisces square her 3rd house planets which are ruled by Sag.

I'm going through looking for patterns wondering where to start.

http://www.bobmarksastrologer.com/TOClessons.htm

I read about patterns there.

Jupiter in Pisces squaring Planets in Sag could create negative traits such as lack of moderation, excessive gambling tendencies etc. but it depends upon the other factors too.

true, true, true, but Pisces also co-rules Jupiter so you have to consider that too. It's very spiritual here.

But both Sag and Pisces lack boundaries, won't that create little bit of problem for the person in spiritual area?

She went from one extreme to the other. She used to be very biblical and against modern practices, relationships... then she went to the other extreme of that spectrum, totally rebelling and rejecting religion altogether.
