Such as having qualities of sensitivity, gentleness, being caring/nurturing, intuitive, etc?

It can...not really. It means more that your lunar qualities are expressed more directly than they would be otherwise. I know a couple Moon in H1 people, one with Moon in Aries and let me tell you, she isn't gentle nor caring and nurturing but she is sensitive in her own way and very expressive about her feelings.

Interesting..

I know someone with a Virgo Moon in the 1st house and yet they come off as being gentle, sensitive, and very watery...

They have a Virgo stellium in the 1st house (Sun is technically in their 12th house though exactly conjuncts their Asc), with Venus and Mercury in Libra...

The only water planet in their chart is Jupiter in Cancer, but that's not a strong enough indicator :/

Not sure what in their chart could contribute to this watery quality about them

Gentle and sensitive are Virgo Moon qualities. So, with a Virgo Moon in H1, their Virgo qualities such as serenity and reticence will be obvious.

Any ways, maybe there's aspects that play into it as well. Neptune?

Yes, I am VERY sensitive! The feeling quality in the tactile realm as well as the empathetic realm are profoundly effected.
