In natal charts men take on their mars sign and women their Venus. Do that still apply for composite?

Not really.

The composite reflects the relationship itself as an independent entity...
However, some people say that the man usually plays out Saturn and the woman the Moon.

Oh and, I think we all express different planets / aspects depending on the situation, it's not as simple as "men = mars" and "women = venus".
