Personally...what are your favorite planet placements for all 12 Signs? That you really enjoy in someone's chart? It's okay to be biased for this. I shall begin! 
Aries - Sun, Jupiter
Taurus - Venus, Mercury
Gemini - Mars, Sun
Cancer - Moon, Jupiter
Leo - ASC, Mercury
Virgo - Mars, ASC - somewhat
Libra - ASC, Pluto
Scorpio - ASC, Mars
Sag - Saturn, ASC
Cap - Sun, Mars
Aqua - Mercury, ASC
Pisces - Mercury, Sun

I love that you said Mercury for Pisces. Most people don't understand this placement 
Some of these are biased by gender, but I'm trying to be neutral: Sun- Leo, Aries
Moon- Cancer, Leo
Mercury- Scorpio, Gemini, Aquarius
Venus- Cancer, libra, Pisces
Mars- Scorpio, Leo, Capricorn
Jupiter- Sagittarius, Pisces
ASC- Libra, Sagittarius

Same, I love Taurus mercury and venusASC - Cancer, Leo
Sun - Aries, Leo
Moon - Cancer, Sagittarius
Mercury - Taurus, Virgo, Sagittarius
Venus - Taurus, Aquarius, Libra
Mars - Aries
Jupiter - Aquarius, Sagittarius

Cancer - Mars .... KIDDING! LOL! Yeah right, that little PIA is the bane of my existence! OK, ok. Seriously though - Aries - Jupiter, ASC (In Mars it's fun, but can quickly become impatient and bullying)
Taurus - Venus
Gemini - Sun, Mercury
Cancer - Mercury, Venus
Leo - Mars, ASC (usually quite gorgeous looking)
Virgo - Sun, Moon (OK...I'm a little biased, it's my Moon sign. LOL)
Libra - Sun, Mercury (even though it's the chattiest!), Saturn, ASC (the best - super sweet and lovely!)
Scorpio - Mercury (again, biased. LOL. But I like it a lot in others as well), Venus, Jupiter (gives an awesome interest in the occult/mediumship/astral projection etc.!)
Sagittarius - Moon, Mars
Capricorn - Sun (although as a Libra I can find them hard to get to know, they're neat.)
Aquarius - Sun, Mercury, Venus
Pisces - Mercury, Venus (as with Cancer, Mars in Pisces is way too passive-aggressive for me) ------------------

Gemini: Mercury, Venus, NN (runs in my family)...oh and my fellow Gem Mars people

I dont think I feel jupiter much, but anyone with none-afflicted jupiter is nice Aries - asc, moon, mars
Taurus - venus, sun, moon, asc, mars, mercury
Gemini - asc, venus, mars, mercury,
Cancer - sun-mars conjunction, venus
Leo - moon, asc, venus (-ish )
Virgo - sun, mercury, asc, mars
Libra - sun (to some extent, depending on what combo)
Scorpio - everything except rising
Sag - moon, asc
Capricorn - moon, venus, mars
Aquarius - sun, mercury
Pisces- moon
