Do you think (in relationships) having opposing ascendants is enough "law of attraction" to keep the relationship going, even if you don't have any planets in each other's 7th houses?

Opposite ascendants are complimentary.

In comparisons the first thing I look for is an aspect between Asc rulers, this will tell you if this is a significant relationship.

I believe the best romantic relationships are between square ACs.

opposite or conjunct ACs are more of the friendship/sibling types of relationships.

Yes agree. Always look to how your chart ruler is aspected by someone else's planets. I've also experienced ASC conjunct ASC, this came out as a very competitive energy with my ex, I'd avoid it, at least if you happen to be a Sag Asc.

I prefer mutable ASC myself - which would either square my ASC or oppose it respectively.

It is certainly possible, but I have also known people with same sign Ascendants that have a good relationship. It's difficult to say exactly what attracts people together and what keeps a relationship going, it is a mixture of environmental things as well as astro stuff. I'm not sure it can fully be pinned down, astrologically speaking. I notice partners with opposite North Nodes seem to attract though, and of course good Sun and Moon synastry.
