I'm asking this mostly for myself but maybe this can help to others... I'm asking if those signs are my dominant signs because they are in two planets or ... What do you think?

Me for ex:
Mercury and Venus in Aquarius (also MC) // Sun and Saturn in 11th house.
Mercury and Venus in 10th house // Uranus and Neptune in Capricorn.
Jupiter and Pluto in Sagittarius // Uranus and Neptune in 9th house.
Sun and Saturn in Pisces.

Do you think those are my dominant signs?

This question is confusing because of syntax. Planets are in signs, not the other way around.

However, based on your example, it appears that Pisces is the dominant sign. The dominant sign is the Sun sign if there are other planets there as well; or the rising sign if there are more planets in it than the Sun's sign; or the sign that holds several planets.
