How would Uranus + Jupiter opposing mars in the 8th house play out?

For starters, consider only the planets. Mars, of course, is the forward-pushing drive of personal impulse and action. With Uranus and Jupiter opposite Mars, you've got two significant energies that further energize impulses, but with big ideas about what you think your actions will get you. So it shows the need for adventure, but rash and impulsive energies that can be accident prone.

If Jupiter and Uranus are conjunct, then that by itself adds a dynamic of real belief in luck, that growth and good fortune are out there to be found.

Jupiter adds even more fiery enthusiasm to Mars, and a tendency for activity driven by the need to stay in motion (kinesthetic), to engage in athletics. But when we add Uranus to Mars this is one of those aspects that can produce a bit of gambler's fever at times that can lead a person to take at least some risks in the anticipation of bigger gains.

There is an on/off dynamic to the actions, which can involve body or big aims, then receding back into more big contemplation, but for the most part (no other configurations saying otherwise) the person wants to remain active and involved, even if shooting off here and there on side trips and getting distracted from real life priorities.

The opposition aspect is what creates the on/off dynamic, but also can characterize relationships so that some drama and a lot of excitement is needed to feel like something is happening. This is someone whose actions seem to create drama or at least get them noticed now and then for their wacky impulses. This isn't your stay-at-home-and-read-a-book type of aspects. Sooner or later this aspect dynamic will affect your relationships by how you pull in others or react to them -- unless you are very focused and organized in expressing these energies and pretty grounded/earthy.

Freedom to change. Renewed energy for something new without completing what one started with.

My sister has this opp. Both Mars and Uranus start with a bang! But have very little follow through.

So when in opposition aspect to each other, it can go to extremes.

You don't like people reminding you of past obligations that to you have outgrown their momentum. You want to charge to new territories unchecked.

In relationships this may cause a lot of instability. As you may be known as a bit of a loose cannon. Exciting but unstable. So people tend to keep you at arms length for fear that you may disrupt their lives.

Jupiter added to the mix makes you "convinced" that your approach is right and can exaggerate the feeling of not wanting to be challenged.

So you can sound very defensive to a point of being self-satisfied or self assured about every move you make. Even though the moves can be haphazard or irregular.
