People say it’s the real you all the time in astrology, but I know a few people who hardly fit their moon sign characteristics. For example my mother is a Virgo moon, her emotions and reactions are wayyy too strong and intense for a Virgo moon. She is very very irrational, she gets angry and it’s uncontrollable. She doesn’t seem to have good control of her emotions. From what I see her emotions are strong. She seems more like a Scorpio moon to me than a Virgo moon.
Another example, my cousin, she is a Pisces with Cancer moon. My sister is also a Cancer moon and is a lot like her moon sign, but my cousin doesn’t seem like one. She doesn’t have Taurus in her chart but something about her screams Taurus to me. She seems like a Taurus moon. She isn’t super emotional like Cancer moons usually are, youd think she would with a Pisces sun along with that. She’s materialistic, social, not too emotional. My elder cousin also a Cancer moon, shows very little emotions. I was so surprised these two were Cancer moons, I had to double check their charts, but no they are.
Not the only time Ive encountered this. Why do people say the moon is so important and the real you when that doesn’t seem like the case with some people I know. Including myself. I am an Aquarius moon but more emotional than they say Aquarius moons are. I barely feel like an Aquarius really. Even people close to me would say so. My sister thinks Im not anything like an Aquarius. Why does this happen?

You should look at additional aspects to the Moon as well as house position.

I am Cancer Moon. I care...true. But I also very impatient and can get very angry too..Mars square my Moon.

I am good at articulation. Most people would think me Gemini. I have Moon in 3rd house

After the Sun, the Moon is the second strongest influence. Aspects with Moon are more important than the sign it is in.

Your mother could have squares by Mars or Jupiter to her Moon, or parallel or contra-parallel aspects in declination.

I'd also think that the house Cancer rules would show how relevant moon is to you. Like Cancer ruling the second house might not be the same as it ruling the twelfth. And put the moon then in a yin house too it almost doesn't even get expressed.

In your case perhaps she has some strong Pluto aspects and it sits in her first house. Or Cancer might be ruling one of the fire houses, sitting in a fire (or air - third house mostly) house. That would have her Moon's energy be very out there. And add to that its' aspects...

Who said Virgo doesn't have emotions? Mutable earth, same mode and polarity as Pisces.
