Would Sun in the 7th house indicate being a housewife since the native sacrifice their lives for their partners to shine which would indicate them putting their dreams on hold for their family/partner.

Umm... No way. This interpretation is really a bit of a stretch...
Sun doesn't really have anything to do with sacrifice. Sun in the 7th house wants to be and interact with other people. 7th house rules other people and by extension stuff like partnerships...I don't see why it would lead to being a housewife even if that might have a vague connection to serving the partner or something.
What's in the fourth house?

I think it depends why someone wants to be a housewife. People have different motivations for it. Some think it's the woman's job and they have a very conservative and traditional mindset. Others just don't want to work a regular job because they don't like it and think it's easier to stay at home - they have a husband that makes enough money by himself.

I have 3 planets (Saturn, Pluto and Jupiter) in the 4th house and I couldn't be further away from a housewife

Must be Moon in 4H. Even though I work from home, I would be considered taken care of & housewife status. Three of my friends that are full-fledged SAHM’s, all have moon in 4th. One is also Cancer moon.
