Please post your Thanksgiving recipes. I am very interested in vegan alternatives but non-vegans are welcome too!

I just made these delicious squash turnovers. All vegan!
Easy to make. The dough handling requires some mastery but if you're patient enough, you can do it! (The dough has to thaw for 40 min at room temp. Guess who put it in the oven and made a mess, 'cause they couldn't wait that long )

Well, anyway, here is the recipe. Sorry, I don't measure ingredients when I cook. Horrifying, I know.

2 packs of frozen Puff Pastry

Filling:

squash
walnuts
brown sugar
pumpkin pie spice
vegetable oil

Grate the squash and mix it with the walnuts, sugar and pumpkin pie spice. Add some oil. Stir-fry the whole thing until the squash is tender.

Stretch! the dough and cut it into squares or whatever shapes you want.
Take one square and spread the mix on top. Put another square over it. Pinch the edges together.
Bake at 400 degrees in the oven for 20 min or until the pastries brown up.
Enjoy.
