fresh green beans simmering in broth

frozen corn

cashews

I drained the mixture w/ cold water and added sliced pimientos and some dressing (Kraft extra virgin olive oil basil parmesan vinaigrette).

It was pretty good, though salt is a must with this one. I had cukes on the side. Just thought I'd share.

Wow!
I had the same thing a couple of weeks ago, but it also had slivered almonds, flax seed, and sweet red and green pepper in it!
PS.Lightly steamed my cukes in sour cream and dill weed.

Yummy

My favorite corn salad has this:

sweet corn (fresh or frozen)
shallots (1 shallot....or you can use garlic in a pinch)
basil or thyme (I prefer thyme)
feta cheese (optional)
extra virgin olive oil
a dash of white wine vinegar or rice vinegar or even just plain ol' vinegar

Saute shallots in olive oil, add corn, then herbs on medium heat. Remove from heat, add vinegar, add feta if you wish, and nom nom nom

You can also add sliced roasted peppers, kalamata olives, or fresh tomatoes. Yummmmmmmmmmmmmmmmmmmmmmm!
