Mmmm... carrot cake!Carrot Cake Recipe courtesy Alton Brown, 2005 http://www.foodnetwork.com/recipes/alton-brown/carrot-cake-recipe/index.html Total Time: 2 hr 50 min Prep 40 min Inactive 1 hr 0 min Cook 1 hr 10 min Yield: 1 (9-inch) cake Level: Easy Best-Ever Easter Dinner DRINK Fresh Strawberry Bellini APPETIZER Traditional Southern Deviled Eggs SALAD Mixed Green Salad With Parmigiano Crisps More Ingredients Unsalted butter, for the pan 12 ounces, approximately 2 1/2 cups, all-purpose flour, plus extra for pan 12 ounces grated carrots, medium grate, approximately 6 medium 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon ground allspice 1/4 teaspoon ground cinnamon 1/4 teaspoon freshly ground nutmeg 1/2 teaspoon salt 10 ounces sugar, approximately 1 1/3 cups 2 ounces dark brown sugar, approximately 1/4 cup firmly packed 3 large eggs 6 ounces plain yogurt 6 ounces vegetable oil Cream Cheese Frosting, recipe follows Directions Preheat oven to 350 degrees F. Butter and flour a 9-inch round and 3-inch deep cake pan. Line the bottom with parchment paper. Set aside. Put the carrots into a large mixing bowl and set aside. Put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds. Add this mixture to the carrots and toss until they are well-coated with the flour. In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt. With the processor still running drizzle in the vegetable oil. Pour this mixture into the carrot mixture and stir until just combined. Pour into the prepared cake pan and bake on the middle rack of the oven for 45 minutes. Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205 to 210 degrees F in the center. Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely. Frost with cream cheese frosting after cake has cooled completely. Cream Cheese Frosting: 8 ounces cream cheese 2 ounces unsalted butter, room temperature 1 teaspoon vanilla extract 9 ounces powdered sugar, sifted, approximately 2 cups In the bowl of a stand mixer with paddle attachment, combine the cream cheese and butter on medium just until blended. Add the vanilla and beat until combined. With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition. Place the frosting in the refrigerator for 5 to 10 minutes before using. Yield: approximately 2 cups IP: Logged |

My mind is on the new TLC reality show 'Long Island Medium' and the star Theresa Caputo and I dunno why but I cry throughout all her shows when it has her bringing msgs to the living. And I was dying to know her astro but she doesn't even have a wikipedia page. All I got from research is that she is now backed up for 2 yrs for readings and that her email is Longislandmedium@gmail.com to request. Bummer. I don't care if it's a reality show and prob scripted I turned into a complete pool of tears watching it. And no there is no crazy hormonal things going on (!) I watch the next episode thinking I won't and then boom when she starts on the details on some guy's dead friend or some girl's dad the tears are just automatic. So anyway last night I researched on the spirit world, the scientific research pointing to it, or lack thereof, where I got sidetracked thinking on the nature of reality and the difference between mind vs. brain (if there is one). I found this lady last night who was a believer in the spirit world, who sought to do hard research, and after 25 yrs became a skeptic. Lonake, I forget the name of this British guy who had been doing a similar show on the British TV. He was wildly popular and yes his shows were so moving. I am not afraid of this kind of research and paranormal phenomena. It's a bit weird how much sense these phenomena make to me. I enjoy them very much and don't scare me at all (and I'm one who can't stand Halloween movies; I get scared ******** by most of them!). I had two dead people (that I know) come to me in my dreams with messages and they both were extremely happy and there was no fear at all upon meeting them. My logical mind has abandoned all explanation but my Pluto in Virgo trining my Moon, Venus in Scorpio, Scorpio on MC, Sun in early Sag, Scorpio cusp, all make me feel good about the dead and afterlife. I have a fear he might be a Cappie! He's definitely an earth sign. If he's a Virgo, no good news for me as my Pluto and SN are in Virgo, I'm trying to outgrow them! LOL

It was on TLC The Learning Channel I guess it was Sunday night at 10pm PST. 2 half hour shows back to back. http://tlc.discovery.com/videos/long-island-medium-videos/ ^ They have a link for the schedule there on the top  The next PST airing on TLC is 7pm this Wednesday, the next new show is at 10pm PST on Sunday night ~!
