IDK, Texas is more about beef than pork.
My family--that is, extended family--pretty much collectively operates a huge farm in East Texas. Perhaps the only reason they don't industrialize is because then they'd have to decide who exactly owns and gets what and that would cause some bad blood. But they still get by. I'm glad of that because I was horrified to hear how many of the bigger ranchers and farmers operate.
They also let the chickens roam free range, which I believe makes the eggs taste better. They have a different reason, though, they do it as a means to get rid of ticks and other bugs. Of course we have to lock them up at night so the coyotes don't get them, but that's easy to do, even when one of us forgets to put the feed out in time they get into their coop to roost. (There are many coops, different families have responsibility for a different one.)
