Soy Milk Pancakes

1. c. unbleached all purpose flour (or whole wheat)
1/2 T. sugar
1 T. baking powder
1/2 t. salt
1/2 t. baking soda
1 1/2 c. soy milk
1 T. vegetable oil

Mix all dry ingredients; then add wet. Mix/beat well to make a smooth, thin batter. Cook on griddle.

Nephthys' Favorite Dessert

1 scoop Soy Delicious Vanilla (soymilk ice cream)
handful Fresh organic raspberries

This is the yummiest dessert ever! There's just something about the raspberries and the (vegan) ice cream!

Nephthys' Favorite After Work Snack

1-2 cups soymilk (plain or vanilla)
4-5 medium size fresh organic strawberries
small chunk or scoop Soy Delicious Vanilla ice cream (vegan)

Blend in blender. Voila'!

Favorite Steamed Veggies

Veggies, sliced, cubed, any kind
lemon (fresh)
basil (fresh or dried)
black pepper

Place veggies in steamer. Add filtered water to steam. Squeeze lemon over veggies in steamer, (not too much). Sprinkle with basil and black pepper (amount=your preference). Steam for a few minutes only. Serve over rice, couscous, or as a side dish.

Scrambled Tofu

1 lb. firm, organic tofu
Oil or soy margerine
soy sauce
garlic
black pepper
green onions (optional)

Heat oil in skillet. Saute garlic and green onions (if using). Crumble tofu with hands and throw into pan. Using spatula, start "scrambling" tofu, just like eggs. Cook for several minutes, stiring, mixing often. Add black pepper and a teensy splash of soy sauce. Serve hot!

my saturday breakfast of potato & tomato pizza

pizza dough
parboiled sliced potatoes
sauteed onions & garlic
sliced fresh tomatoes
extra virgin olive oil
chopped fresh basil topping

voila! of course, i am too lazy to type out instructions. if you're interested, give me a shout, and i'll get my fingers moving. hehe. (also, to tell the truth, i sprinkled parmesan on top . . . but you can omit to make it vegan).

my next experiment---tasty calzone

pizza dough
shredded potato
shredded carrot
boca soy crumbles (as a substitute for ground beef)
sauteed garlic & shallots
olive oil
chopped sun dried tomato
soy sauce
salt
pepper
chopped fresh basil
hot chili flakes
sesame seed for topping

hmm, bake and eat, LOL! well, i haven't made it yet, so who knows? (i was thinking of adding just a little parmesan to the filling, but again omit to make it vegan).

aphrodite's mediterranean pizza (what a fitting name )

pizza dough
chopped pitted green olives
chopped sun dried tomatoes
chopped fresh garlic
sliced cremini mushrooms(adds a woodsy flavor)
chopped fresh shallot
chopped fresh basil
olive oil
salt
pepper

bake and eat! (again, i had added a little goat cheese on the top, so omit to make it vegan!)

healthy and delicious tomato vegetable soup

V8 juice (for tomato vegetable soup stock)
zucchini
carrots
onion
garlic
olive oil
beans (any kind, your choice)
corn
green beans
small pasta
salt
pepper
dried rosemary
dried bay leaf
dried parsley
dried basil
extra water to adjust stock's texture

woo hoo! soup for a week this has carried me through times when i was sick with a cold. the herbs and garlic are soothing and help me sleep.

hi nepthys!

i have a quick question about the soy pancakes (i plan to make them tonight since it seems so quick and easy) . . . why is baking soda added? do the pancakes come out bitter? i ask because when baking soda (base) is added to a mix without an acid ingredient (typically eggs), the product comes out a little bitter.

Hi Aphrodite!!!!

Sorry I didn't see this sooner! I don't know why it's added, I just assume to leaven it? (help it rise/bake?) I don't notice any bitterness in taste.

I also forgot to mention, it's best to use real maple syrup.

Let me know how they turned out!!!!!

Hi Spin ~ ! You made the pancakes too? Easy, and good, huh?

It depends on the Soy Cheese. Some of them are vegan and will say so. Others will have "casein" which is a milk-protein.

I bought a Vegan Soy Cheese and it is cheddar flavour, and tastes like a cheap pasturized cheese spread.

We also have a Soy Cheese that has casein in it, but I haven't tried it.

i usually simmer it on very low heat, covered for about 30-45 minutes.

I'm only 15 and don't feel I should become a Vegitarian just yet. It would be hassle for my Mom and the rest of the family. So I'll wait when I'm much older or when I'm on my own.
Another thing it must be very difficult for most Vegitarians on this site. It's much easier to buy a burger for 2.99 at some fast food joint. Then to go to the grocery store and pick out all foods necessary to eat a decent and nutritous dinner.

-Didn't Linda say that its ok to eat cheese, milk, and eggs. I mean that is the purpose of the animal, right?

Cannelini Bean Salad

1 1/2 cups cannelini beans, cooked and drained
1 roasted red pepper, diced
7 fresh large mushrooms, sliced
large garlic clove
sea salt
dash of cracked pepper
drizzle of extra virgin olive oil

using the flat end of a chef's knife (the top of the blade), crush the garlic with 1/4 teaspoon sea salt to a paste.

in a large bowl, mix all the ingredients together. allow to marinate, covered, for several hours in the refridgerator. enjoy!

Spaghetti Squash Entree Base

1 Spaghetti Squash
Olive oil
Sea Salt

Preheat oven 350F. Place squash whole in a baking pan. Bake for about 40 minutes. Squash is done when knife is inserted easily. Remove from oven once cooked. With a large knife (preferable 6 or 8 inches long), split squash in half. Remove seeds. With a fork, scrape spaghetti strands into a large bowl. Drizzle olive oil and dash of sea salt.

Enjoy!

P.S. I like it with butter, but I would imagine soy magarine would taste as good too.

Mediterranean Soup (this is very tasty)

1 cup red lentils
1 tbsp. oil
2 chopped onions
3 c. chicken stock (I use chicken boullion)
1 can (28 oz) tomatoes
1 can (19 oz) chickpeas, drained
1/4 cup chopped fresh herbs (optional)
1/2 tsp. each of ginger, paprika,and turmeric
fresh pepper

Fry onions and garlic for 2 minutes. Stir in paprika, turmeric, and ginger. Cook for 1 minute. Add lentils. Stir in chicken stock and tomatoes. Bring to a boil over high heat, stirring occasionally. Reduce to minimum heat. Simmer for about 40 minutes, stirring occasionally. Add chick peas and herbs. Simmer uncovered for 10 minutes. Sprinkle with herbs and pepper.

YUM!

I am not vegan, but love the sounds of alot of these things. I have a couple recipes of my own that I am pretty sure qualify!

Blend a tablespoon of flax seeds, 1 cup of soymilk, and a peach or 10 cherries (take out the pits!) and enjoy! Yummy and healthy!

Slice tomatoes thick. Set aside. In blender combine 1 cup of good olives (take the pits out!), 1/2 cup of olive oil or to taste, 1/4 cup vinegar or lemon juice, 1 clove or garlic, a tbsp. each of oregano, parsley, thyme, and 2 tbsp. of basil, and pepper to taste. (I add an anchovy, but I don't think that is vegan.) Blend and enjoy over tomatoes!!

I love to make whole wheat cous cous with peas and use curry powder, cumin, garlic and
onion to season.

Another good thing is lentils and whole wheat cous cous with garlic and oil and vinegar like a salad.

And my breakfast favorite: homemade oatmeal boiled with soymilk and water and with cinnamon.

everything sounds yummy! I have a question about the pancakes too... do they freeze well? I was thinking about making up a lot of them for the kids to just pop into the toaster to heat up for school.

I have a chocolate chip pumpkin bread recipe but it calls for eggs and condensed milk, so I am going to play with some vegan substitutes and if the end result is edible/good I will post!

~BRAZIL NUT 'CHEESE'~

This *is* the most awesome cheese replacement ever!

I eat this ALOT!

Brazil nuts are one of the few foods that you can by that are ALWAYS organic and wild. Wild food is the best to eat, because it's so enriched with minerals.
Brazil nuts are very high in selenium!!!

Ingredients:

1 Cup Brazil nuts
Juice of 1 Large Lemon
1 Pinch of celtic sea salt
1 Pinch of Cayenne Pepper
1 Pinch of Black Pepper
1 Tablespoon of tahini
and a little water if needed

And then mix into a blender and blend until thick and creamy.

I like it with celery and carrot sticks as a dip, or sometimes I water it down and use as a salad cream.
