mmmmmmmm!

melt a tablespoon of butter (or more!) in a large skillet. add a few handfuls of chopped white onion. let saute a few minutes....till just a little translucent. add 3 eggs to the onions -- break them directly into the pan. stir with a spatula until just blended.

sprinkle with sea salt, freshly ground black pepper and dried basil. add a few handfuls of shredded romano cheese and mix together. let the eggs cook over low heat until just tender....as easy or longer as you like scrambled eggs.

serve with sliced tomato.

impeccable!

(even my 2 year old loves these)

ha ha....

so not vegan, eh?

can anyone suggest a vegan version of this recipe?

with tofu, i would think....but what in the world could ever replace romano cheese?

that's what works so well with the basil....

mmmmmm.....i think i'll serve this christmas morning. goes well coffee cake, i'd imagine.
