crunchy chicken salad

chopped chicken breast
onions
celery
walnuts
little bit of mayo
salt and pepper to taste

yummy on sandwiches

I LOVE Salads. Favourite dinner food....

My fave:

Baby Spinach
Roma Tomatoes
Red Onion
Cucumber
Celery
Walnuts

Dressing: 1 Lime + zest, olive oil, cayenne, celtic sea salt.

Sometimes I make a creamy nut dressing: Brazil nuts, Tahini, Apple cider vinegar, lemon, sea salt, pepper, chilli and water.
(In a blender until thick & creamy)

Heaven.

I have fun at Sweet Tomatoes too...relax, take your time and choose from six different kinds of soup, create your own salad, then wander to see what kind of pasta they have...of course, tapioca pudding for dessert

Right now I'm into different salads, last week I made a Mediterranean salad with artichoke hearts, olives, feta, chick peas with olive oil, vinegar...very yum. This week it's couscous, lentils, arugula, tomatoes, feta mixed with a garlic/vinegar/olive oil dressing...
