I am just going to re post most of what I said on mystic Medusa's blog today...So you know why I am choosing to try this:

Yesterday I went to see a manual therapist. (probably the best one in the state.)
She told me that my stomach/gut is inflamed. And I need to lay off the gluten.
No one has ever told me this before. I knew she was right though. But telling me to not eat carbs…sounds ridiculous and impossible.

I recall a few years ago when I moved out with a trashy ex boyfriend I pretty much lived off of microwave carby meals. Microwave pizzas, and cheff boy rd for breakfast lunch and dinner. Though I was on my feet a lot for my job, I still gained 10 pounds. And even worse…when it was my time of the month people would ask me if I was preggers. agh no!

…but I figure hey if I do this diet or detox….maybe people will not feel I need to point out how fat/preggers I look when its my time of the month.

I am willing to give avoiding gluten a try. But I know I have to be in the right mind set.(if I just focus on what I can’t eat, I’ll be really uptight and no fun…and end up binging) And this time I wont be a sour puss if I’m at a wedding and people are having cake, I wont make a scene I’ll probably just have some cake too. (I did the S. Beach diet when I was 17 I was at a party with lots of good food. AND I COULDN’T EAT ANYTHING THERE)
Carbs make the world go round, so I will allow my self to break the rules sometimes. As long as I make good choices, and buy food that’s right for diet…I should see progress.
Now that I’m not a dancer anymore, I could really give a rats @ss how skinny or fat I am.
My motto has been for a while now. “Fuq diets, if you want to get in shape just exercise.”
But lately when I exercise, I end up pulling a muscle. I pulled a muscle in my groin 3 weeks ago playing kickball…and it still hurts. ugh! (yeah I’m p!ssed cause I even stretched before I played)

Unless you're in a large city, you're going to have a nearly impossible time avoiding gluten. Restaurants are getting a little better about it though.. It's in everything and the small ingredients. To avoid being 'sour' just make your own gluten free cake and bring it with you. Then maybe someone else there who's gluten intolerant can eat it and it'll be a cool novelty.

Celiac disease (gluten intolerance) is very common in people with northern european ancestory. Many have it and don't know about it. There are tests for it but they're frequently not conclusive without an intestinal biopsy but they can identify it for some people. I'm guessing that's what she means, but you'd need to lay off gluten for life. If you have it you'll think clearer and be less angry when you're off gluten (yes brain damage and impairment is a factor in celiac disease).

There are tons of gluten free products and pastas. They tend to be on the higher calorie side, but there's no reason why you can't keep eating normally.

Just because I'm a vegetarian doesn't mean I ruin barbecues or thanksgiving celebrations when I'm invited and show up. I just eat the corn or whatever else I can and am grateful. If that means there's only one dish I can eat I happily eat that dish. When my family does barbecue we do a lot of veggie products. It's not a big deal, it's your health.

And to answer your question... I have when I thought I was gluten intolerant, and my rashes dissapeared and I got to thinking a lot clearer. My waistline is normally really small though. I ate a lot of egg starts and fruit and veggies. When I could I bought gluten free ready made chocolate chip cookie mix. There are recipes too, but I never got into it enough for buying and mixing the rice flours etc.

Yep I am of Northern European decent. Irish/British/Polish

The manual therapist told me she was surprised to find out that they have a lot gluten free options in Italy.

I had a successful day one.
Especially since I really need to go grocery shopping.

I had coffee w/ cream
(very wired breakfast) coleslaw with a pickled egg.
(Lunch) an apple w/ peanuts
(dinner) a microwave meal w/ rice beef and veggies.
And a small bag of dried peach slices as a snack

This is a very interesting site. They believe we don't actually need carbs at all and as long as you are eating meat with fat you will make energy (think Inuit or Eskimo diet)

I am not sure whether their very rigid style is right, but I do agree we eat far too many carbs today for our lifestyles.

Probably great when we were manually ploughing fields, hauling logs and walking everywhere but totally unecessary for the sedentary lifestyles we have today.

Even if we spend 8 hours a week in a gym there's probably 160 hours a week when we are sitting around doing nothing!

Or storing up carbs in our fat stores!

I was going to go grocery shopping today, but then I remembered it's labor day.
I know some places are open anyways...but I can get by another day or two.

YES CARBS ARE SO GOOD!, but so bad for ya if you over do them. (Well unless your blessed with a really good metabolism...and I'm not!)

I will admit, I had a halo burger Saturday. I could of had a salad...but the salad looked so BLAH! It honestly looked like it only had lettuce and tomato slices in it. (I'm so picky w/ salads...I like darker lettuce, with like chicken and cranberries in them...or that south west style with the corn and black beans)

Or I could of asked them to take the bun off the burger...but that would just be so lame. hahaha

And a beer later that night cause I really needed a drink and my dad only packed beer and I didn't feel like going to the bar or the store...

Other than that I've been able to stick to avoiding gluten pretty well.

All depends on what symptoms you are having?

I've just had 10.1.12 a camera jobbie, one up, one down and biopsy for celiac disease. The moment my doc said he was blood testing for wheat/gluten I immediately went gluten free and 90% of my symptoms disappeared.

Tested negative, but definately gluten intolerance,which have mostly the same symptoms as celiacs, but being intolerance is not an *auto immune disease* just huge sensitivity....

It can get expensive to, buying gluten free bread mostly. Best to learn how to bake a few easy things espec like cocount macaroons...

• Makes: 12-14
• Prep time: 10 mins
• Cooking time: 20 mins
Ingredients
The best way to melt chocolate is to place it in a bowl over a saucepan of boiling water
• 2 egg whites
• 150g caster sugar
• 225g desiccated coconut
• 100g good-quality milk chocolate
• 100g good-quality dark chocolate
Method
1. Preheat the oven to 180°C/Gas 4. Line a baking tray with greaseproof paper.
2. Whisk the egg whites and sugar until frothy, then stir in the coconut and mix well. Use an egg cup to shape the mixture into ‘domes’ and turn these out onto the greaseproof paper. Repeat until all the mixture is used. Bake in the preheated oven for 15–20 minutes or until light golden brown. Remove from the oven and leave them to cool on the baking tray.

here is a list of what you can eat OR not..

you can buy flour substitute from all supermarkets, to make crumble mixs with very little effort, just baking apply, bit sugar, few sultana's. Part cook apples in microwave, mix little cornflower and water, add to apples to get them to 'set' without collapsing.
