Starzy54's Skillet Chicken ParmesanThis is my favorite thing to cook currently,thought I'd share in the new forum.
It saves time and requires no baking.Plus its so yummy
serves 6
6 thin sliced boneless skinless chicken breast fillets,Or 3 thick pieces cut in half through and through.
Italian seasoned bread crumbs.
All purpose flour.
Cooking oil.
Tomato sauce,either home made,or sauce from a Jar to save time.
Shredded mozzarella cheese.
finely shredded Parmesan cheese.
Salt
black pepper
3 eggs cracked and mixed well into a bowl,to dip fillets in
Parsley flakes
chopped fresh garlic
Box of rotinni/penne/or rigatoni pasta
1.First season the chicken fillets with salt and pepper.Than dip them in the flour,coat well.After that dip the flour coated fillets in the egg mixture.than dip once again in to the Italian seasoned bread crumbs.Do this for all the fillets.Have your bowls set up before hand,and a running sink close by to wash your hands between dips.(After all the fillets are breaded,set them aside on a plate)
2.Over medium flame,heat up some oil in a large skillet.When hot,add the breaded fillets to the pan,and fry them turning once when they all golden brown and cooked through and through.About 10 mins on each side,or until well done.
3.Take the breaded fillets out of the pan,and let them rest on a cutting board or plate.
4.Mean while or at the same time,heat some oil and chopped garlic,parsley,salt,pepper,and a dash of Parmesan cheese in a sauce pan,when hot add your tomato sauce.Let it cook until heated thoroughly and almost boiling.
5.Place your cooked fillets in a large skillet,and pour in your sauce over the chicken fillets.Set it on low heat,and sprinkle mozzarella,and Parmesan cheese
on top of each fillet.Sprinkle a little parsley flakes on top of the cheese.Cover
the skillet while on low heat,to let the cheese melt.The more cheese you put in
the better.In about 3-5 mins,all the cheese should be melted and gooey.
6.When the cheeses is melted and gooey,serve up the your fillets with a heaping of cheesy tomato sauce.On the side i always cook up some penne noodles and toss them with some oil,parsley and fresh chopped garlic.bon appetite
