Its heading toward 100 deg out, dont really like heating up the house too much with the oven when it is this hot so.....

Smoked brisket~wrapped in heavy duty foil several times, baked at a low temp for 4 hours 250 (fat sided up) seasoned with Old Bay, lots of garlic, salt and pepper, removed placed on a charcoal grill I have prepared with Mesquite chunks, smoked for another hour to hour and half. Threw some ears of corn on the grill, sprayed with olive oil pam first.

Used the last bit of heat in the low oven for scalloped potatos. Left the skins on red potatos, boiled, dusted in flour, put chunks of butter, onion powder, added a little milk and lots of sharp cheddar cheese.

Amazing!!!

ooooo and I almost forgot!

Bacon-wrapped, low fat Philly cheese-stuffed jalapenos, smoked with the corn and brisket!

For my own little 4th party, I am about to smoke Alaskan Salmon, filet mingon and bacon wrapped jalapenos.

Will relax in the hot tub, with a fine glass of vino and watch the fireworks at Sea World later~
