2 cups pumpkin, fresh cooked, mashed 1 cup sugar 1/2 stick Oleo 3 Eggs, beaten 1/2 cup Buttermilk 1 Tbsp Vanilla 1 tsp Nutmeg 1 tsp Cinnamon 1/2 tsp Fresh Lemon Juice 1 Deep dish 9" pie crust Boil skinned slices of fresh pumpkin like sweet potatoes until soft, then mash. Combine pumpkin, eggs, sugar, buttermilk, oleo, spices, lemon, then vanilla. Pour into pie shell and bake for 40 - 60 minutes. Let cool for 1 hour. Add Whipped Cream and serve

Ingredients Needed: 3 unbaked deep dish pie shells 1 large can of pumpkin (NOT pumpkin mix) 4 eggs--1 whole and 3 yolks 1 cup of sugar 1 cup of brown sugar 1 can of evaporated milk cinnamon, nutmeg, and saltStir all ingredients in a large bowl. It's just a pinch of salt. The way you measure out the cinnamon and nutmeg is just to sprinkle it liberally on top. Just cover the top of the mixture in the bowl with each. Remember, it's going to be three pies. Too much is better than too little. Hey, this recipe goes back for generations, so my great grandma didn't measure stuff like that. The problem with most pumpkin pies is that you can't taste the cinnamon or nutmeg, and they are not super creamy. That's why a lot of people say they don't like pumpkin pies--till they eat a slice of mine. In a separate bowl, beat with a mixer 3 egg whites until stiff and fluffy. Stir the beaten egg whites (Bad egg whites, bad!) into the bowl that has the other ingredients. Pour into the pie shells. It makes three yummilicious pies. Bake for 15 minutes at 425 degrees. Turn down the oven and bake at 350 degrees for another 30 to 40 minutes (each oven is different). They will be slightly brown on top and look noticeable done when they are finished. Take out of the oven and immediately place in the fridge. Chill thoroughly before slicing and eating. Enjoy! IP: Logged |

If you`re not sure if it`s done or not, put a butter knife into the center. If the knife comes out clean, pies done.
