We have a frost warning for tonight or tomorrow, I think...

Anyway, one of my favorite things about fall is soup.
I love soup!

Does anyone have quick and easy soup recipes to share?
Keeping in mind, I don't get home from work until after 8 or 9 pm some nights, so if they are quick, all the better.

Here is one I've made for years. My kids love it.

Potato Soup

*About 7 or 8 boiled and peeled (or not if you like the skin) baking potatoes

*Milk

*Butter

*Sausage (optional)

*Cheese ( I use Velveeta because it melts fast, and remember I'm all about fast, but you can use cheddar or whichever you like. Swiss would probably be good too!)

*Garlic (I use minced from the jar)

*Green Onions

spices to taste.

After peeling and boiling the potatoes, cut them into chunk sized.
Add to stock pot some sausage, cooked and chopped very, very small. I've used leftover crumbled bacon as well, or no meat at all.
Add some butter to that, and your garlic.
OH, also a bit of olive oil.

Let that cook a bit to marry the flavors.

Then slowly add the milk, but make sure your flame isn't too high or you will burn the milk.
Turn down to simmer and let that cook awhile.

Add your spices, and keep stirring..simmering.

*This is where I take my sons portion out, because he doesn't like cheese, but if you like cheese, add your cheese now. The amount is totally up to taste. Put a lid on it, and it melts faster.

When you have a nice layer of cheese melted on top, add a sprinkling of finely chopped green onions.

This is SUPER filling, tastes great with French or Italian bread, and makes great leftovers.

I once made a comment that I feel that everything is right in the world if I'm making soup (or something similar)

I've been eating soup out of a can or a longlife tetra pack - need I say more....Ha

Alright Gypsee, it needs to warm up a bit there if I am going to be visiting my home state in a couple of weeks. I don't want to freeze to death on the ferry to the island or have to fly in a "tin goose" because Erie has already frozen over. So I'm ordering up some "ideal" fall weather for myself.

I know chile isn't quite soup but kind of like a hearty soup, so...
here's one that sounds easy (I haven't tried it yet though and I imagine one could temper any "heat" according to individual tastes... but I got it off a sight called PrarielandHerbs. I make the pumpkin bread dressing for Thanksgiving sometimes. I've got a super easy corn chowder one I'll dig up.

Lora's White Chile
2 size #4 cans great northern white beans
1-3 chopped onions
2 lbs ground turkey (I'm guessing you can substitute w/ground chicken too, pref. hormone free)
2 cans salsa verde (about 14 oz total)
2 cans copped green chilies (or cut up fresh ones)
1 small bottle La Victoria green taco sauce
2 cans (about 32 oz) chicken broth
1 tsp cumin or to taste
1 tsp oregano or to taste
Fry turkey, onions, cumin, oregano together. When fully cooked, add other ingredients and simmer for 30 minutes or until ready.

quick soup...hhmm... ok, the quickest i use is this ----> in a pot of cold water i toss in 1 to 2 veg. bouillon cubes, some frozen veggies and a little curry paste ( i use pataks hot curry ) let that come to a boil and toss in angel hair pasta ( crunched up so it fits on the spoon ) and cook until pasta is done... then sprinkle a little parmesan on top

amounts would need to be adjusted for your quantities and taste obviously

I suddenly got a visual of Homer Simpson doing his drooling thing..

Gypsee... I HAVE to try that potato soup recipe!!
My daughter does something similar. She buys the soup in a bag. I think it's called Bear Creek or something like that. Then she adds cooked sausage and corn. But yours sounds SO much better <drools>.

And I've never tried white chili, but sounds gooooood.
And for the curry recipe, I'm curious. I was addicted to this little curry place in California years back when I was pregnant with my twins. They made curry spaghetti with chicken slices on top. I don't handle spices very well, so it was mild. But it was SO good! Now I'm....wait for it... curry ous.. lol.

I really want a good corn chowder recipe...

Fry onions in some olive oil

Add carrots, lentils, tinned tomatoes, some tomato puree
Add shake of salt and pepper
Boil for 30 mins
Liquidise

Fry onions in some olive oil

Add peas, leeks, and some chunks of ham
Boil for 30 mins
Liquidise half and add back to remainder

You are right, it is soup weather, this weekend I have planned a soup making session. So, more suggestions please!

I wore my coat today for the first time since May.

Comforting Corn Chowder ~ source: Midwest Living

1 medium onion chopped (1/2 cup)
1 stalk celery, sliced (1/2 cup)
2 T. butter (or marg.)
2 medium round red potatoes, peeled and cubed small
1 16 oz. pkg frozen kernel corn (canned works too)
1 14.5 oz can chicken broth
2 c. half-n-half, light cream, or milk
3 T. all-purpose flour
1 14-16 oz. can cream style corn
1 t. snipped fresh rosemary
1/4 t. ground white pepper
1/2 t. salt

In large saucepan, cook onion & celery in butter till tender. Add potatoes, frozen corn, & broth. Bring to boiling. Reduce heat. Simmer mixture, covered, about 10 minutes or til potatoes are tender, stirring occasionally.
Meanwhile, in small bowl, whisk together the half-n-half and flour til well combined. Stir this into the corn mixture when potatoes are tender. Add the cream-style corn, rosemary, salt & pepper. Cook and stir til thickened and bubbly. Cook and stir chowder for 1 minute more.

Yep it's been overcast here too.
But Fall is my favorite time of the year

The changing colors, the cooler weather, HALLOWEEN!!! LOL.

And I am SO gonna make me Gypsee's recipe and that corn chowder recipe.. Something about a pot of homemade soup, grilled cheese sammies and a storm outside that makes you all giddy inside...

Bisque, is a richer, thicker seafood based soup, whereas ordinary soup is veggies/meat boiled in water.
