I have been wanting to try something new at home for dinners and was hoping to get some ideas on quick and easy recipes. I get home at 6:30 and bed time for my little one is 9:00 so between that time I need to fit in making dinner, bath time for him...and whatever else needs to be done.

Sooooo anyone know of any quick and easy recipes for dinners?

Besides, seeing how we all come from all over the globe, it might be fun :-D

What kind of recipes? What do you have in your fridge lol? It's hard to suggest something if you don't know what kind of ingredients you have lying around
I love cooking! Usually i always have pasta, olive oil, garlic and onions around. They're necessary staples to me, along with about 4 types of cheeses.

I usually go to epicurious.com for recipes.
They have a wonderful layout.
I also love food blogs.
My recent favorite is smittenkitchen.com ...she makes some great stuff.
My favorite recent quick dessert recipe was vanilla roasted pears (I found the recipe on smittenkitchen) which i served with vanilla ice cream.
Also Simply Recipes is a GREAT food blog/site with really wonderful recipes.

Oh I'm not looking for anything particular.
Just thought it would be fun to share favorite easy recipes and maybe get some ideas. Like what is your favorite thing to make for dinner that's quick and easy?

I'll start..

My favorite thing to make is Shepard's Pie
There are a ton of variations on this, but this is one I got from someone at work...
I never measure anything, so I'm kinda guessing on the amounts here.

Shepherd’s Pie

Pre-heat oven to 350 degrees F

1 pound ground hamburger
1 regular size can cut green beans
1 Large can (or 3 regular size cans) Tomato soup
About 4 Cups Instant mashed potatoes
2 teaspoons Thyme
Salt & pepper to taste

Fry up ground hamburger until cooked.
Drain green beans and add
Add Tomato soup
Add thyme, salt & pepper

Pour mixture into baking pan
Cover with prepared Instant mashed potatoes

You can sprinkle the top with paprika to make it look nice,
But that’s not a requirement.
Also, my daughter likes to add different things like corn and/or onions.
I think less is more, but you can play with it.

Bake for 35 minutes

I really like Everyday Food magazine recipes too. They seem to have a lot of classic and simple and healthy and what I call "purists" recipes. You are right, it's fun finding gems from other cultures. If you want to go the optimal healthy route, it's amazingly true to stay away from prepared foods on the aisles and stick to shopping the perimeter of the grocery store for your whole foods. My first two jobs were in an Epicure shop and in the Specialty Foods Dept. of a major grocery store. I'm pretty aware of the marketing tricks to draw the consumer in to the more convenient and higher priced products. Being frugal and resourceful just seems like a good fit for exerting some control over the current economy.

For ones who eat chicken -
Here's a recipe using rotisserie chicken from the grocery store, so it's a great quick, easy, summer dish. You could even use chicken that you prepared ahead, which would be the even healthier option.

White Bean and Roasted Chicken Salad ~ source: Cooking Light

2 c. coarsely chopped skinless, boneless rotisserie chicken
1 c. chopped tomato
1/2 c. thinly sliced red onion
1/3 c. sliced fresh basil
2 (16 oz. cans cannellini beans or other white beans, rinsed and drained

Dressing:
1/4 c. red wine vinegar (or substitute/ like balsamic)
2 T. extra virgin olive oil
1 T. fresh lemon juice
2 tsp. Dijon mustard
1/2 t. salt
1/4 t. freshly ground black pepper
2 garlic cloves, minced

To prepare salad, place first 5 ingredients in a large bowl; stir gently to toss.

To prepare dressing, combine vinegar and remaining ingredients, stirring with a whisk. Drizzle over salad, tossing gently to coat.

Boil some white rice.
Cool if off and mix it with one part salt, three parts sugar and 4 parts rice vinegar while fanning it continuously.
Make sure you are stirring in those with a wooden spoon.
Put some roasted seaweed flakes on a flat surface, roll the rice mix into a ball and then roll in into the flakes.
Makes for a yummy snack or you can use it as a main course with some salad or soup on the side.

Tuscan salad

*romaine lettuce
*white beans
*olives
*thinly sliced red onions
*thinly sliced parmesan
*olive oil & lemon juice

combine. yum

Spaghetti with black pepper and cheese

Make some spaghetti, and reserve 1 tbsp of the pasta water. Once the pasta is cooked, drain, put it back in the pot, add a little cream, olive oil, the reserved pasta water, 1 minced garlic, some grated parmesan, and black pepper.
More yum

OK these are some I like, I think they're relatively simple,

Tuscan Bread Salad (roughly 2 servings)
-3 slices whole grain bread, cut into 1" squares
-1/2 c. tomato, thickly diced
-1 c. olives, whole
-1/2 medium cucumber, cut once lengthwise, then sliced
-2-4 oz. mozzarella cheese, thickly diced
-olive oil, at least 2 tbsp
-red wine vinegar to taste
Combine all. Tastes best when refrigerated for a bit, so for lunch make previous night, for dinner make the morning of same day. Garnish with fresh basil leaves, if desired. My addiction to this rests solely on the fresh olive oil moistening the whole grain bread, so that's why I put "at least 2 tbsp" but me I'm never well-behaved enough I always add more But if you're gonna refrigerate don't douse it with the liquids cos the bread will turn soggy, just a bit of each, and then when ready to eat you can add more.

Tortilla Torta (4-8 servings)
-1 c. plain yogurt
-1 c. heavy cream (ok as you saw from above i like my food drenched, if you don't you make it maybe 1/2-3/4 c. of each it'll still be fine)
-16 oz. jar of any green prepared salsa you like
-2 small cans of green chiles (if you like added spice) they're sold next to the prepared salsa
-12 oz. monterey pepper jack cheese, shredded (this depends on how much you like cheese)
-16 oz. chicken, coarsely chopped
-12 corn tortillas
Preheat 375. Whisk plain yogurt and heavy cream for a couple seconds, set aside. Coat 9" square baking dish (or even a larger dish would work if you keep the food close together) with veg. spray. Lay out in layers on baking dish: 4 tortillas, 1/2 of the salsa, half of the chicken, half of the cream mixture, 1/3 of the cheese. Repeat. Layer again with the remaining 4 tortillas and sprinkle the rest of the cheese on top. Cover with foil, in oven for 15, remove foil and leave in for another 10. Let stand a bit as it tends to be warm. I eat this with black bean soup and avocados. Being vegetarian I don't use real chicken, so I rely on the imitation meats for some recipes that do call for it that I like, like this one.

Chicken Stir-Fry (2 servings)
-3/4 tsp toasted sesame oil
-sesame salad dressing, to taste
-1/4 c. peanuts, chopped
-1 pkg bagged coleslaw (just the cabbage etc. cut into strips, or you can make your own)
-8 oz. chicken, cut into strips
Onto skillet (or wok) heated at medium, pour sesame oil, and half of the coleslaw mix for 3 mins. Transfer to plates. Heat up chicken for a bit on skillet, if you like it warm, add to plate on top of slaw and toss with dressing and peanuts.

I went through a fad for a few mos where every wk I tried at least 3 new recipes from their mag (I used to have a subscription) then graduated to actually ripping out all the lil pages and categorizing them according to type of recipe. So I basically have hundreds still saved, and I just did a new one today lmao. I promise Martha that when I go through all of these I'll re-subscribe They do look purist, and always clean, I'm obsessed with how clean the recipes look lol (Cap moon+Venus in h6 :laughing

I had a few different dishes while I was in Yemen that I'd love to either try to make or get the recipe's for.

Maybe if I describe, someone will know what I'm talking about.
It was a chunky meaty sauce that you pour over rice. It's an african dish because he was from Nigeria....Yoruba tribe(if I spelled that right).
But I know he made it with pork, the red sauce was tomatoes, onion...spices.. and lord knows what else. That's why I was hoping to get a recipe while this thread was up.

Here's my favourite quickie

Margherita Pizza

I but the base with no sauce on it & then I get 1 can of crushed tomato's to make my own pizza sauce. You can freeze the left over sauce for another time.

Anyways back to it.

Sauce

1 can of tomato's pour in a pot & ad a pinch of salt & pepper. I like to ad a few herbs such as bay leaf, sage & thyme. 1 large or two small bay leaves. Simmer gently stirring occasionally until it looks like the right consistency.

apply to your base with a soup spoon to push it around leaving 2cm of the base edge free.

Add basil to your taste. Fresh is best but I buy the stuff in the tube because I don't like to waste a whole bunch just for a few leaves.

Add Bocconcini cheese. You can use any variety, small or large balls it doesn't matter.

I then add some grated pecorino cheese for a zingier taste because bocconcini is very mild. You can throw on a small amount of mozzarella if you prefer.

Pizza needs to be cooked at med high heat in the oven so you can work that out for what ever country you're living in. Australia in on the metric system so everything is celcius.

It's not hard to tell when you're pizza is ready anyways.
