I'm going to spend this Thanksgiving with my boyfriend's father's family (eek, I'm meeting his aunts, uncles, grandparents & cousins for the first time!), and am the only vegetarian there.

His mother was sweet enough to go out of her way to make vegetarian dishes when I visited her a few weeks back, and will make sure to do the same here as well. But I'd like to help out with a contribution of my own so she is not unduly burdened.

So I tried a pumpkin risotto recipe last week for a potluck which was very disappointing - it was seasoned only with pepper and was lacking in flavor..

That said, can anyone suggest some vegetarian Thanksgiving main or side dish recipes for me to try out? I'd be grateful!

Green Bean Casserole

French Fried Onions

Cream of Mushroom soup

and green beans...

recipe is on the Durkee french fried onions
container...
yum...

it's best with fresh greens beans!

I'm going to make a side rather than presume to make a main dish for the family Thanksgiving.

I've decided to go with your suggestion of the green bean casserole.. it looks delicious and is probably hard to mess up; besides, my boyfriend loves beans, so there will be at least one person who will probably like it!

Sunshine9, it's really good,
I Still make a turkey on Thanksgiving..
along with the green bean casserole,
potatos, sweet potatos, carrots, corn,
and cranberry sauce...stuffing of course
..and homemade rolls...

I've been working on desserts all day,
I'm a mess right now, lol

I hate dishes, darn sink keeps
filling up...
