1/2 lb marshmallow 1/2 cup orange juice (freshly squeezed) 1 tsp vanilla 1 cup cream (fresh) 1 1/4 tsp salt Spray a tart plate with nonstick spray. Cut the marshmallows into smaller pieces, and put in a heavy-bottomed pot with the orange juice and vanilla. Heat and stir constantly, until the marshmallows start melting. Do not boil! You only want them to melt completely. Add and stir in the vanilla. Remove from heat and cool to lukewarm. Beat the cream until stiff, adding the salt, and then fold into the marshmallow mixture. Scrape into prepared plate, and leave in fridge to set.

To make the topping, place cocoa, milk and margarine into a bowl and microwave on high for 30 seconds. Stir well and add icing sugar and vanilla essence. Beat until smooth and then spread the topping over the marshmallows and allow to cool before cutting into squares.
