I will be posting alot on this subject~

A midwestern farm girl, uprooted and drug to deep in the heart of Texas, I have gained many cultures along the way.

Holiday cooking, I dont hold back!

Making my mother and my grandpa, who just flew in from Indiana a very "quirky" holiday treat!

Spicy Shrimp Caribbean Quesadillas

Take two wheat tortillas, spread the outside with a bit of butter or spray olive oil, flip them so that the oiled sides are facing eachother, (so you can stuff them.)

Add some shrimp, already sauteed in garlic, red pepper (what ever you desire, I will add a bit of white wine to this batch.)

Then add some mango pico de gallo and either pineapple or mandarin oranges.

Shread jalapeno monterrey jack cheese on top of the mixtures.

Carefully place on a griddle, iron preferably, and cook like a toasted cheese sandwich, using the other tortilla as the top.

Be careful so as not to dump the contents when filpping.

Garnish with guacamole and a few sliced jalapenos (canned and pickled or fresh if you like) and serve on a festive plate!!!

Well, for Christmas brunch at mi casa...

Am going to make breakfast quesadillas...

Much like the previous post, cept will mix potatos, pan sauceage (I love to sprinkle anice in pan sauceage) and eggs, some sharp cheddar, served with home made pico-de-gallo.

Pico De Gallo


[fresh jalapenos, (raw, deveined and deseeded,) some Texas 1014 sweet yellow onions, cilantro, and fresh, minced garlic]

served, again with guacamole or avacado slices...

IF I get a new smoker for Christmas, (bfriend reports Santa said I was good ) I will smoke a thick Porterhouse steak, slice thin and have some home-made wheat bread to go with it.

I always bake homemade sugar cookies, cut with my b-loved granny Gee's cookie cutters (she has crossed, but she is here with me as I write), decorate with homemade frosting!

Lately I have been addding Locks and bagels, with some cream cheese that I have prepared with fresh herbs.

To munch on, Queso dip....easy!!! Velveeta cheese food, chorizo sauceage, Rotel tomatos and I fry my own corn tortillas for dipping!

Not sure about sweets, beyond the cookies, yet...maybe do a fruit tray with Greek yogurt for dipping?

This is just a start...

I, have since a young girl, baked homemade bread with my granny, so homemade bread is always a mainstay for Christmas at mi casa!!!

To drink? Some sun-brewed Texas tea, Mimosas with fresh-squeeezed orange juice.
